I needn't say about the health benefits of carrot.. But what to do.. Carrots are not tasty as chocolates or spicy as pizza.. Its after all a boring vegetable.. Will tell you a super way to include carrot.. Prepare this carrot chutney.. You will get all the nutrients and in a very tasty way..

Ingredients:


Carrot                   - 2 ( medium size)
Big Onion             -1
Tomato                 - 1
Garlic  Cloves       - 2
Urad Dal               - 2 tsp
Red Chillies          - 2
Tamarind               - Very Little
Salt                        - As required
Oil                         - 3 tsp

For Seasoning:

Oil                         - As required
Mustard Seeds      - 1 tsp
Urad Dal               - 1 tsp
Curry Leaves        - Few


Procedure:

  1. Heat oil in a pan
  2. Add urad dal, red chillies and Garlic.
  3. Add chopped onions. Once it become translucent add chopped carrots.
  4. After three minutes add chopped tomatoes.
  5. Add salt and tamarind pulp.
  6. Switch off the flame. Once it gets cool down grind it. Do the seasoning and add it to the chutney.
