Vazhaithandu Chutney

Vazhaithandu Chutney
Plantain stem is rich in potassium and hence it helps to improve immunity. It has Astringent quality which helps in blood clotting. It regulates pressure, controls diabetes and detoxifies body. It is one of the main foods to add to our diet.

Today's recipe is for those people, who are looking for alternative for Vazhaithandu kootu. This chutney will be very much spicy  and everyone will love it for sure. One of the best ways to include healthier vazhaithandu in a tastier way. Here you go!!

Recipe For :2

Preparation Time : 30 minutes

Ingredients:

 Chopped Vazhaithandu    - Around a cup (Plantain Stem)
Urad Dal                           - 2 tsp
Garlic Pods                       - 2
Dry Red Chili                   - 2
Salt                                    - As required
Tamarind                           - 1 tsp
Mustard Seeds                   - 1/2 tsp
Urad Dal                            - 1/2 tsp
Curry Leaves                     - few
Oil                                      - 1 tbsp

Procedure:


  • First comes cleaning procedure of vazhaithandu. Its quite easy. First chop vazhaithandu into thick round slices and while chopping it, you will see fibers in between the slices. Remove it using your fingers in circular motion.  Now place chopped and fiber removed plantain slices in a bowl of butter milk. Butter milk is used to prevent plantain from changing its color. You can also replace butter milk with little lemon juice added water.
  • Chop finely plantain slices and again add it to butter milk or lemon juice added water.
  • Now take few barbecue skewers. Wash and tie it at one end. Use this to remove some more fibers from chopped plantain stem. Just rotate in circular motion with the skewer bundle in the bowl. Fibers will stick to the bundle. Remove it. Repeat the above step for some more time, till all the fibers are removed. 
  • Heat oil in a pan.  Add urad dal, dry red chili and garlic pods to it.
  • After the dal turns golden brown, add chopped plantain stem. Saute for 7 to 10 minutes till plantain stem is cooked well. Add enough salt, tamarind and switch off the flame.
  • After everything is cooled down, grind it adding little water.
  • Heat a tsp of oil in a pan. Add mustard seeds, urad dal and curry leaves to it. When they splutter add it to chutney. Enjoy with Idli, Dosai or Chapathi of your choice.

Pirandai Chutney

Pirandai Chutney Pirandai is a wonderful medicine with lot of health benefits. It treats Indigestion and its a best worming medicine.  I have given the recipe for preparing a tasty chutney with Pirandai. I assure everyone will love this chutney for sure. It tastes so good with Chapathi, Roti or Dosai. A must given food to toddlers.. The recipe Follows..

Recipe For :2

Preparation Time : 20 minutes

Ingredients:


Pirandai             - 200 gm
Grated Coconut - 1/4 cup
Urad Dal            - 2 tsp
Dry Red Chili    - 3
Garlic Pods        - 2
Tamarind           - 1 tsp
Salt                    - As required

For Seasoning:


Mustard Seeds  - 1/4 tsp
Urad Dal           - 1/4 tsp
Curry Leaves    - few

Procedure:


  • Wash pirandai. Chop it into two. Take out inner flesh and seeds from it. After that chop it into little pieces. Only this is little time consuming process in the whole preparation. Always select pirandai which is young and tender. This is how pirandai looks like

  • Heat oil in a pan. Add urad dal and dry red chilies to it.
  • When they turn golden brown add garlic pods to it.
  • Saute for a minute and after that add chopped pirandai.
  • Cover with a lid and cook well pirandai. You can see it changes it color. It will turn little pale. It will take about 7 to 10 minutes for the pirandai to get cooked completely.
  • After pirandai has been cooked, switch off the flame and add tamarind. let it cool.
  • After it has cooled down completely, grind it along with coconut adding little salt and water.
  • Heat some more oil in the same pan. Add mustard seeds and urad dal to it.
  • When they splutter add curry leaves and add it to chutney.
  • Enjoy your chutney with Chapathi/Roti or Dosai.

Preparation Time : 15 minutes


Ingredients:


Garlic Pods        - 1/4 cup
Red Chili           - 3
Urad Dal            - 1 tsp
Tamarind           - 1 tsp
Salt                    - As required
Oil                     - 1 tsp

Procedure:

  • Heat oil in a pan. Add Urad Dal and Red chili to it,
  • When they turn golden brown add Garlic pods. Saute till its cooked.
  • After its cooked, Switch off the flame and add Tamarind. After it is cooled down, grind everything along with salt.
  • Enjoy your spicy chutney!!

Preparation Time : 15 minutes


Ingredients:


Curry Leaves        - 3 handsful
Big Onion             -1
Tomato                 - 1
Garlic  Cloves       - 2
Urad Dal               - 2 tsp
Red Chillies           - 2
Tamarind               - Very Little
Salt                        - As required
Oil                          - 3 tsp

For Seasoning:

Oil                         - As required
Mustard Seeds      - 1 tsp
Urad Dal               - 1 tsp
Curry Leaves        - Few


Procedure:

  1. Wash curry leaves. Chop Big onion and Tomato. 
  2. Heat oil in a pan
  3. Add urad dal, red chillies and Garlic.
  4. After they turn golden brown, add chopped onions. Once it become translucent add chopped tomato.
  5. When both onions and tomatoes are cooked, add curry leaves.
  6. Saute for 2 minutes and then add salt and tamarind pulp.
  7. Switch off the flame. Once it gets cool down grind it. Do the seasoning and add it to the chutney.

Ingredients:


Garlic  Pods                 - 10
Chopped Coconut        - 1/4 cup
Tomato                         - 1
Red Chilli                      - 2
Oil                                 - As required

For Sesoning:


Mustard Seeds      - Few
Urad Dal               - Few
Curry Leaves        - Few


Procedure:

  1. Heat oil in a pan. Add garlic and red chillies..
  2. After they are roasted, add chopped tomato.. Saute till tomato gets cooked well.
  3. Switch off the flame and let it cool.
  4. Take a blender.. Grind coconut for a while and add the above mixture.
  5. Add salt ,enough water and grind it smooth.
  6. Do the seasoning and serve it..

This is best to eat with Moong Dal kichadi.. Here is the Recipe..

Ingredients:

Tamarind                - small lemon size ball
Salt                         - 1/2 tsp
Sugar                      - a pinch
Big Onion              - 1 (small)
Green Chili            - 1

For Seasoning: 

Mustard Seeds      - 1/2 tsp
Cumin Seeds        - 1/2 tsp
Red Chili              - 1
Curry Leaves        - few
Oil                        - 2 tsp

Procedure:

  • Extract Tamarind juice from Tamarind. 
  • Finely chop Big onion and Green chili. Add it to the tamarind juice. Add also enough salt and sugar.
  • Do the seasoning and add it to the Tamarind juice.
  • Mix everything well. Add to Moong Dal kichadi and enjoy your Kichadi.

Ingredients:


Mint Leaves                 -  1cup
Chopped Coconut       - 1/4 cup
Garlic  Cloves              - 2
Urad Dal                      - 2 tsp
Red Chillies                 - 2
Tamarind                     - Very Little
Salt                               - As required
Oil                                - 3 tsp


For Seasoning:

Oil                              - As required
Mustard Seeds          - 1 tsp
Urad Dal                    - 1 tsp
Curry Leaves             - Few


Procedure:

  1. Heat oil in a pan
  2. Add urad dal, red chillies and Garlic.
  3. Add washed mint leaves.
  4.  when mint leaves are cooked., add salt and tamarind pulp.
  5. Switch off the flame. Once it gets cool down grind it along with coconut. Do the seasoning and add it to the chutney
  6. Tastes good with Idli and Dosa.

This is one of the tastiest chutneys. Its advised to use only white sesame seeds for this chutney. Here is the chutney recipe..

Ingredients:


White Ellu                     - 1/2 cup (White Sesame Seeds)
Chopped Coconut        - 1/4 cup
Garlic Pods                   - 2
Red Chilli                      - 2
Urad Dal                       - 1 tbsp
Tamarind                      - little
Oil                                 - As required

For Sesoning:



Mustard Seeds      - Few
Urad Dal               - Few
Curry Leaves        - Few

Procedure:

  1. Heat oil in a pan. Add urad dal, garlic and red chillies..
  2. When they turn golden brown, add Ellu.. Cover the pan with a lid because the Ellu used to splutter. Saute it till the Ellu leaves aroma and changes it color.
  3. Switch off the flame and let it cool.
  4. Take a blender.. Grind coconut for a while and add the above mixture.
  5. Add salt ,enough water and grind it smooth.
  6. Do the seasoning and serve it..

Kollu (Horse Gram)      - 1/2 cup
Chopped Coconut        - 1/4 cup
Garlic Pods                   - 2
Red Chilli                      - 2
Urad Dal                       - 1 tbsp
Tamarind                      - little
Oil                                 - As required

For Sesoning:



Mustard Seeds      - Few
Urad Dal               - Few
Curry Leaves        - Few

Procedure:

  1. Heat oil in a pan. Add urad dal, garlic and red chillies..
  2. When they turn golden brown, add kollu.. Cover the pan with a lid because the horse gram used to splutter. Saute it till the kollu leaves aroma and changes it color.
  3. Switch off the flame and let it cool.
  4. Take a blender.. Grind coconut for a while and add the above mixture.
  5. Add salt ,enough water and grind it smooth.
  6. Do the seasoning and serve it..

Carrot                   - 2 ( medium size)
Big Onion             -1
Tomato                 - 1
Garlic  Cloves       - 2
Urad Dal               - 2 tsp
Red Chillies          - 2
Tamarind               - Very Little
Salt                        - As required
Oil                         - 3 tsp

For Seasoning:

Oil                         - As required
Mustard Seeds      - 1 tsp
Urad Dal               - 1 tsp
Curry Leaves        - Few


Procedure:

  1. Heat oil in a pan
  2. Add urad dal, red chillies and Garlic.
  3. Add chopped onions. Once it become translucent add chopped carrots.
  4. After three minutes add chopped tomatoes.
  5. Add salt and tamarind pulp.
  6. Switch off the flame. Once it gets cool down grind it. Do the seasoning and add it to the chutney.

So hiding it in the form of chutney and giving to him.. Your kids will also love this.. just give it a try.. Its basic tomato chutney only.. Have only added capsicum to it..

Big Onion             -1
Tomato                 - 1
Garlic  Cloves      - 2
Urad Dal               - 2 tsp
Red Chillies          - 2
Tamarind               - little
Salt                        - As required
Oil                         - 3 tsp

For Seasoning:

Oil                         - As required
Mustard Seeds      - 1 tsp
Urad Dal               - 1 tsp
Curry Leaves        - Few


Procedure:

  1. Heat oil in a pan
  2. Add urad dal, red chillies and Garlic
  3. Add chopped onions. Once it become translucent add chopped capsicum
  4. Once capsicum gets cooked, add chopped tomatoes.
  5. Add salt and tamarind pulp.
  6. Switch off the flame. Once it gets cool down grind it. Do the seasoning and add it to the chutney.

Quick Tips:

  1. This chutney goes well with Idli.. Can also be served with chapathi..

Ingredients:


Tomato                      - 250 gm
Garlic Pods                - 5
Salt                            - As required
Red chillies               -1
Sambar Powder        - 2 tsp
Mustard Seeds          - few
Urad dhal                  - few
Oil                             - 2 tsp

Procedure:


  1.  Blend tomatoes, garlic and red chilly in a blender.
  2. Heat oil in  a pan. Add mustard seeds and urad dhal
  3. Add the tomato paste .
  4. Add salt and sambar powder. close it with a lid and cook till oil separates from the paste.
  5. Chutney is ready to serve

This is the healthiest  thuvaiyal. It goes well with almost any type of breakfast. We used to have this with Briyani.

Ingredients:


Coriander Leaves              - 1 cup
Urad dhal                          - 2 tsp
Red chilly                         - 1
Garlic pod                        - 1
Salt                                    - As required
Tamarind                           -  a little
Oil                                     - As required

For Seasoning:

Oil                                   - As required
Mustard seeds                 - little
Urad dhal                        - little


Procedure:


  1. Heat oil in  a pan.
  2. Add urad dhal, red chilly and Garlic
  3. Once urad dhal turns brown add coriander leaves.
  4. Saute for a while. Add tamarind and salt.
  5. Once it gets cool down grind it. Don't add too much water since its thuvaiyal.
  6. Do the seasoning and pour it over the thuvaiyal.

P.S:


  1. You can add even 1 small tomato while sauteing. It will give very nice taste.

This is the universal chutney. It tastes really good with almost all breakfast dishes.. According to one's taste bud can increase or decrease fried gram..

Ingredients:


Chopped Coconut              - 1 cup
Fried Gram                        - 1/4 cup
Ginger                                - a small piece
Garlic                                - a small piece
Green Chilli                      - 1
Salt                                    - As required

For Tempering:

Mustard Seeds
Urad dhal
Curry leaves

Procedure:


  1. Grind first coconut, Ginger, Garlic and Green Chilli.
  2. When its half done add fried gram and salt. Add water as needed
  3. Heat oil in  a small pan, add things for tempering .
  4. Pour it in the chutney.
  5. Serve with Idli or Dosa.
