Want a healthy snack to munch on?? Here is Ammini Kozhukattai especially for you. You can prepare it in jiffy and its very much healthy too since its steamed. Over to the recipe..





Preparation Time : 30 minutes


Ingredients:


Rice Flour For kozhukattai  - 1/2 cup
Mustard Seeds                         - 1/2 tsp
Cumin Seeds                            - 1/2 tsp
Dry Red Chili                          - 2
Curry Leaves                           - few
Grated Coconut                       - a handful

Procedure:


  • Take rice flour and salt in  a bowl. Mix both well. Boil 1 cup of water in a pan and add it to the flour. Use a spatula and mix flour with water.
  • After some time, start kneading the dough. If you need, add some more water and knead the dough tight. Make small balls out of the dough. Steam kozhukattai using a Idli plate.
  • Heat oil in a pan. When its hot, add mustard seeds, cumin seeds, dry red chili and curry leaves.
  • When they splutter, add steamed kozhukattai to it. Add grated coconut and toss it well together. Your Ammini Kozhukattai is ready!!!

White Channa or Chickpeas or Kondakadalai is a good source of protein to vegetarians. Its one of the healthy snacks to have in the Tea time.. It also helps to maintain Blood Sugar level.. Soak channa in water for 4 -5 hours. If you couldn't find enough time to soak channa, soaking in hot water for 2 hrs is very fine.

Here goes the recipe..

Ingredients:

White Channa   - 1 cup
Salt                    - As Needed

For Seasoning:

Oil                         - As Needed
Mustard Seeds      - 1 tsp
Urad Dal               -  1 tsp
Curry Leaves        - Few
Grated Coconut    - Optional

Procedure:

  • Cook the channa in cooker along with salt.. I used to keep the cooker in high flame for 1 whistle, and after that will reduce the flame and keep it for 15 minutes. Open the cooker after the pressure subsides and see whether sundal is cooked.
  • Do the seasoning and add it to sundal.
  • Your healthy sundal is ready..
  • If you wish top the sundal with Grated Coconut..

Ingredients: (Recipe for 2)

Boiled Peanut        - 1/2 cup
Puffed Rice            - 1 /2 cup
Big Onion              - 1 
Tomato                   - 1 
Carrot                     -  1 
Salt                         - As required
Chilli Powder         - 1/2 tsp
Coriander Powder  - 1/2 tsp
Cumin Powder       - 1/2 tsp
Chat Masala           - 1/4 tsp
Coriander Leaves   - few

Procedure:

  • Chop finely onion and tomato. Grate carrot.. Take a big bowl.. Mix everything together. Serve it immediately. Prepare this just before the time of serving. Adjust the spice according to your taste..

My kid is a great lover of muruku.. My Mother In Law is an expert in preparing muruku..  When we are about to visit our native, She used to ask my  kid,  what he wants,.. He always  says that he wants muruku .. . He is such a lover of muruku.. When i prepared this ragi muruku for the first time, he asked me, amma, will it turn to yellow?? And he said that he didn't want the black muruku.. he wanted only the yellow one..  I was explaining him that this  muruku is very healthy and he should eat this.. After  tasting  the muruku, he started enjoying it.. He was telling, Amma, Healthy muruku is super ma!! .. Yes indeed this muruku is very tasty and crispy...Here is that super recipe..

Ingredients:

Ragi Flour          - 2 cups
Rice Flour          - 1 cup
Fried Gram         - 1/2 cup (pori kadalai)
Salt                     - As required
Chilli Powder     - 2 tsp
Asafoetida          - a pinch
Sesame Seeds     - 1 tsp
Oil                      - For frying

Procedure:

  • Grind fried gram to powder.
  • Mix all the ingredients together. Add 2 tbsp of hot oil to the muruku flour. By doing so, muruku will be crunchy and it won't absorb oil too. Adding oil is enough and  no need to add butter/ dalda. But if you wish for the flavor can add.

  • Add water in small instances and start kneading.  Knead it like chapathi dough.

  • Take a muruku press. Take the star shaped plate with a single hole as below.

  •  Grease a plastic sheet with little oil.. Insert muruku flour in the muruku press and start pressing. Slightly rotate in the clockwise dirction.

  • Heat oil in a pan.. When the oil is hot, slightly drop muruku in the oil.. When its cooked on one side, flip it to the other side.. As the muruku itself is  brown in color you can't find whether it is cooked or not by its color. When the bubbles in the oil reduce,it shows muruku is cooked.
  • Take it from oil, Drain it on a paper towel and serve it.
  • If you don't have much patience to do with the single hole muruku, replace it with a three hole  star shaped muruku plate.

  • Fill the muruku press and start pressing..Enjoy this tasty and healthy Muruku..

How many Cricket fans there?? World cup fever everywhere!!!. ' Eating Something While watching Tv is a nice pleasure..   Popcorn is the snack which comes to our mind first, when we want to eat something while watching tv.. Its not only a delicious snack but very healthy too.. 

I learnt this recipe from my #Anitha Anni..  Just Corn kernels is  enough for this recipe..  Those instant popcorn also follows the same procedure as that of ours.. It has salt within.. If you know how much amount of salt to add then you can prepare using corn kernels itself .. Just salt!! We are all cooking experts n we don't know how much salt to add.. hmm.. So Just grab corn kernels and start preparing!!

Ingredients:

Corn Kernels          - 1 cup
Oil                           - 2 tbsp
Salt                         - As required
Turmeric Powder   - 1/2 tsp

Procedure:

  • Take a heavy bottom cooker.. Add cooking oil to it.
  • Once its hot, add kernels, Salt and  Turmeric powder..
  • Close the cooker lid in opposite direction .. This is done to allow the steam to escape from the cooker so that popcorn will be crispier and dry.
  • You will hear popcorn popping.. Gently shake the cooker to prevent kernels lying down from getting burnt.
  • Once popping slows to several seconds between pops, switch off the flame and transfer the popcorn to a wide bowl.
  • You can use butter instead of oil for a nice buttery flavour.
  • You can add pepper along with turmeric powder, if you want a spicy popcorn..

Ingredients:

Pori                      - 1 cup  (Puffed rice)
Mustard Seeds    - 1 tsp
Urad Dal              - 1 tsp
Channa Dal         - 1 tsp
Peanut                 - 2 tsp
Red Chilli             - 1
Crushed Garlic     - 1
Curry Leaves        - few
Oil                         - As required
Tumeric Powder    - 1 tsp
Salt                        - As required


Procedure:

  • Heat oil in a heavy bottom cooker or a pan.. 
  • Add mustard seeds, Urad dal ,channa dal, pea nuts,. Once it turns golden brown add red chillies, cruched garlic and curry leaves.
  • After 1 minute, add salt and tumeric powder.. Saute for some seconds.. Add pori to it.. Mix it well.. keep on frying it for 3-5 minutes.
  • Your masala pori is ready!!

Karupu Ulundu (or) Black Urad Dal is a natural Pre-biotic food..  That is, it can't be easily digested by our normal digestive system.. It requires the  help of stomach bacteria to digest it.. So our stomach ,in turn stimulates the growth of good bacteria to digest the karupu ulundu.. That Good Bacteria  is very good for nutrition.

Karupu ulundu benefits are obtained well by having it as  a sundal..  Its one of the best snacks for the evening time..

Ingredients:

Karupu Ulundu  ( Whole Black Urad Dal)    - 1 cup
Salt                                                                 - As Needed

For Seasoning:

Oil                         - As Needed
Mustard Seeds      - 1 tsp
Urad Dal               -  1 tsp
Curry Leaves        - Few
Grated Coconut    - Optional

Procedure:

  • Dry roast Karupu ulundu (or) Black Urad Dal until it leaves a nice aroma.
  • Soak karupu ulundu in enough water for 1 - 2 hrs. (Soaking in water is purely optional, if you soak in water, sundal will get cooked soon.)
