Malai Roti (Roti Canai)

Malai Roti

Today's recipe is Malai Roti, which is prepared with Maida, egg and milk. One of the best alternatives for Parotta. This dish tastes good only when prepared with Maida. So you can try this dish, on special occasions and on parties. The recipe follows..

Yields : Around 6 Roti
Ingredients:


Maida                - 2 cups (All Purpose Flour)
Milk                   - 1/2 cup (Boiled and cooled down milk)
Egg                    - 1
Butter                 - 1 tsp 
Baking Soda       - 1/4 tsp (You can also use Cooking Soda)
Sugar                  - a pinch
Salt                     - As required
Oil                      - 1/4 cup

Procedure:

  • Take a bowl. Add Maida, salt, sugar and Baking soda to it. Mix everything well. Break an egg and add it to the bowl. Add also butter to it. Add milk in small instances and start kneading the dough. The dough should be of very soft consistency so add little water if needed and knead accordingly. If the dough is of soft consistency only, you can expand it easily.
  • Apply some oil on the top of dough so that dough don't get dry. Cover it with a cling wrap and rest the dough for an hour. If you don't have cling wrap just cover the bowl tightly with a plate.
  • After an hour, take big lemon size balls from the dough. Expand it with your palm using oil. Fold in the shape you wish. I have folded it in rectangular shape.
  • Heat a dosai pan. When its hot, place shaped out roti to it. Add also oil to it. When roti is cooked on one side, flip it to other side. Remove from heat after its done on both the sides. Enjoy your Roti with either Veg Side dish Gravies or Non-Veg Side dish gravies of your choice.

Broccoli Paratha

Meal Broccoli Paratha   Broccoli is such a healthy vegetable. It stands first in cancer prevention. Having Broccoli in our regular diet is very important. We can't find Broccoli frequently in India. You can use Cauliflower instead. Both has cancer prevention properties.

Any Broccoli haters there?? My kid is one among them. I should bribe him with Pappad or else he won't eat Broccoli. But he loves this Broccoli Paratha... Indeed he doesn't know that its Broccoli which is stuffed in. Try this delicious yet healthy Broccoli Paratha..

Here is the recipe..

Recipe For : 4 Parathas


Preparation Time : 20 minutes


Ingredients: 

Wheat Flour        -  1 cup
Salt                      - As required
Hot Water           - As required
Oil                       - As required


For Stuffing:


Broccoli Florets                 - 1/2 cup
Salt                                    - As required
Turmeric Powder              - 1/4 tsp
Chili Powder                     - 1/2 tsp
Coriander Powder             - 1/2 tsp
Cumin Powder                  - 1/4 tsp
Garam Masala Powder     - 1/2 tsp
Corinader Leaves               - few

Procedure:

  • Cut and place Broccoli florets in hot water for 10 minutes.Drain water and chop florets very fine. I Used vegetable chopper for it. You can also use knife
  •  Heat oil in a pan.. When the oil is hot, add chopped florets..  Saute for 3-5 minutes and add in all the powders except garam masala powder.
  • Saute it till the Broccoli gets cooked .. It will take another 5- 10 minutes.. Switch off the flame and add garam masala powder.Now the stuffing is ready..
  • Add salt to wheat flour. Add hot water in small instances and knead well.. Make balls out of the dough.. Roll out chapathi dough for 2 inch diameter with the help of flour..  Place the stuffing inside and throw some flour over the stuffing.This is done to avoid the stuffing from coming out.
  • Close the stuffing and remove the excess dough.


  • Shape the dough with hands so that dough completely covers the stuffing..Roll out the dough with the help of flour.

  • Heat Dosa pan.. Place rolled out chapathi on the pan.. When its cooked on one side, turn it to other side.. If you wish add Ghee, Butter or oil.. I didn't use anything..

  • Serve it with curd or pickle..

    Shortly we can call Radish, as Miracle Vegetable. Yes !! Its one of the very low calorie vegetables. It plays very important role in prevention of various cancers. It also helps to maintain good heart health. 

    I have heard , many people saying that, they don't cook Radish because of its pungent odour. That pungent odour will be totally absent in this paratha..   Everyone will like this paratha for sure..This is the tastiest way to include healthy Radish in our diet..

      A must try recipe for sure..

    Wheat Flour        -  1 cup
    Salt                      - As required
    Hot Water           - As required
    Oil                       - As required


    For Stuffing:


    Radish                              - 1 (medium size)
    Salt                                   - As required
    Turmeric Powder              - 1/4 tsp
    Chilli Powder                     - 1/2 tsp
    Coriander Powder             - 1/2 tsp
    Cumin Powder                  - 1/4 tsp
    Garam Masala Powder     - 1/2 tsp
    Corinader Leaves              - few

    Procedure:

    • Grate Radish. Heat oil in a pan.. When the oil is hot, add  grated radish.. Saute for 3-5 minutes and add in all the powders except garam masala powder.
    • Saute it for another 5 minutes.. Switch off the flame  after all the water has been evaporated and add garam masala powder.Now the stuffing is ready..



    • Add salt to wheat flour. Add hot water in small instances and knead well.. Make balls out of the dough.. Roll out chapathi dough for 2 inch diameter with the help of flour..  Place the stuffing inside and throw some flour over the stuffing.This is done to avoid the stuffing from coming out.



    • Close the stuffing and remove the excess dough

    • Shape the dough with hands so that dough completely covers the stuffing.Roll out the dough with the help of flour..

    Ingredients: (Makes 4 Parathas)

    Wheat Flour         -  1 cup
    Salt                       - As required
    Turmeric Powder  - 1/4 tsp 
    Chilli Powder        - 2 tsp
    Hot Water             - As required
    Oil                         - As required


    For Stuffing:



    Chopped Big Onion         - 1
    Salt                                    - As required
    Turmeric Powder              - 1/4 tsp
    Chilli Powder                    - 1/2 tsp
    Coriander Powder             - 1/2 tsp
    Cumin Powder                  - 1/4 tsp
    Garam Masala Powder     - 1/2 tsp
    Corinader Leaves             - few

    Procedure:

    • Take a bowl. Mix everything under 'For Stuffing' . Keep it aside. We are ready with the stuffing.

      • Serve with either Veg Gravy or Non Veg Gravy.
      • I served it with curd and Paneer Butter Masala

      We are advised to avoid everything in white foods like Sugar, Maida, White Bread and White Rice.. But one white food, we can eat with a good feel is cauliflower.. It helps to prevent many type of cancers since its rich in Anti -Oxidants..

      This is the healthy way to include cauliflower in our diet.. We will get the full nutrition of cauliflower in this paratha.. Here goes the kids friendly recipe!!

      We are advised to take three to four cups of vegetables everyday.. Half of our plate must be Fruits and Vegetables only.. Its very difficult to eat that much vegetables in the form of curries or Gravies..So try to include more vegetables in Breakfast and Dinner items.. Vegetable Paratha is one such high nutrition food.. Prepare the stuffing.. Roll it in dough..

      Give it to  kids along with curd.. They will surely enjoy it.. Try this kids friendly nutritious Paratha!!

      Ingredients: (Makes 4 Parathas)

      Wheat Flour        -  1 cup
      Salt                      - As required
      Hot Water           - As required
      Oil                       - As required


      For Stuffing:


      Grated Carrot                   - 1/4 cup
      Grated Cabbage              - 1/4 cup
      Chopped Big Onion         - 1
      Ginger Garlic Paste         - 1 tbsp
      Salt                                    - As required
      Turmeric Powder              - 1/4 tsp
      Chilli Powder                    - 1/2 tsp
      Coriander Powder             - 1/2 tsp
      Cumin Powder                  - 1/4 tsp
      Garam Masala Powder     - 1/2 tsp
      Corinader Leaves             - few

      Procedure:

      • Heat oil in a pan.. When the oil is hot, add chopped onions.. Once onions become translucent, add ginger garlic paste.
      • Add grated carrots and cabbage.. Saute for 3-5 minutes and add in all the powders except garam masala powder.
      • Saute it for another 5 minutes.. Switch off the flame and add garam masala powder.Now the stuffing is ready..

      Love potatoes?? But hesitating to eat because of its risk factors??.. Potato is one of the most comfortable vegetables.. It has more potassium than that of a banana..It helps with Digestion, Heart health, Blood Pressure and even cancer prevention.

      But if you have it as French fries , Hash brown  or potato fry, you tend to loose the whole nutrients of potato.. So try to reduce potato intake in such form.. The best way to have potatoes is in their steamed form.. Even in  boiling, we are losing all nutrients in water.. So just place it on a steam pot or in a Idli pot and steam it..

      Potato is  full of carbohydrates only.. carbohydrates will get digested soon and you will feel hungry soon.. So you will eat more food for the next meal. That is the reason, we are advised not to have much potato..   So even if you take potato for a meal, reduce other carbohydrates like rice..  Have some fresh vegetables and fruits along with it for a  Nutritionally balanced meal..

       The better way to include potato in healthy way is Aloo Paratha.. And you don't need any Side -dish for this.. Just have it with Curd or pickle.. An Easy Go recipe..

      Ingredients: (Makes 4 Parathas)

      Wheat Flour        -  1 cup
      Salt                      - As required
      Hot Water           - As required
      Oil                       - As required

      For Stuffing:

      Potato                                - 1 (Big Size)
      Big Onion                          - 1
      Ginger                                - a small piece
      Salt                                    - As required
      Turmeric Powder              - 1/4 tsp
      Chilli Powder                    - 1/2 tsp
      Coriander Powder             - 1/2 tsp
      Cumin Powder                  - 1/4 tsp
      Garam Masala Powder     - 1/2 tsp
      Corinader Leaves             - few


      Procedure:

      Finely chop Onion and Ginger.
      Take a bowl.. Mix everything under 'For Stuffing' well Make balls out of it.
      Add salt to wheat flour. Add hot water in small instances and knead well.. Make balls out of the dough.. 
      Dough balls and stuffing balls should be of same size.

      Roll out chapathi dough for 2 inch diameter with the help of flour..  Place the stuffing inside.
