Pani Puri


How many Pani Puri lovers there??? I love Pani Puri a lot.. But i won't buy from outside.. Here comes the hygienically prepared home-made Pani Puri!!!


Pani Puri



Ingredients:


For 'Pani':

Puris For Pani Puri              - 20
Green Chutney                    - 4 tbsp
Sweet Chutney                    - 3 tbsp
Salt                                      - A required
Red Chilli Powder              - 1 tsp
Cumin Powder                   - 2 tsp
Chat Masala Powder          - 1 tsp
Ice cold water                     - 1 litre

For Stuffing:

Boiled And mashed potato - 1 cup
Red Chilli Powder              - 1 tsp
Cumin Powder                    - 1 tsp
Coriander Powder               - 1 tsp
Garam Masala Powder       - 1/2 tsp
Chopped Onions                 - few

Others:

Omam Podi                         - few


Procedure:

  1. Take water in a bowl. Add all the ingredients for pani.. taste it.. Increase chutneys others according to your taste. Pani is ready now.
  2. Mix everything for stuffing in another bowl.
  3. Take those puris. Break it in the middle and make a hole., place the stuffing inside the puris and top it with omam podi. Dip it in the pani and serve immediately. Delicious Pani Puri is ready to serve!!!

Worried about hygiene of puris, which we are purchasing outside for preparing pani puri?? It can be easily prepared at home.. Lets see how to prepare those puris!!!

Ingredients:


Rava  (Sooji)                        - 1 cup
Maida (All Purpose Flour)   - 3 tbsp
Baking Soda                         - 1/4 tsp
Salt                                       - As required
Water                                   - As required
Oil                                        - As required

Procedure:

Take a bowl.. Add all the ingredients except oil.. Add water in  small instances and start kneading. . Rava will absorb more water.. Add water when ever required.. knead well.. The dough should be semi elastic.. Cover the dough with a wet cloth  and keep it aside for 30 minutes.

After 30 minutes, take a ball out of the dough.. Roll it  with the help of a rolling pin.. It will be little difficult to roll out the dough.. Add oil and roll it.

With the help of a lid, cut the dough.. You can also use a cookie cutter.. Take a lid which will be appropriate..

  Remove the excess dough.. Take out the cut puris and deep fry in oil.. Use as required..

You can even dry remaining cut puris under shade and store it for later use..

So.. Whenever you need puris, Just take and fry those dried ones..

Its very much similar to samosa channa chat.. Just swap cutlet with samosa.. That's it!!

Ingredients:


Vegetable Cutlet               - 2
Channa Masala                 - As needed
Green Chutney                  - 1 tbsp
Sweet Chutney                  - 1 tbsp
Big Onion                          - 1 small
Chat Masala                       - 1 tsp
Omam podi                        - As needed    
Yogurt                                - 1 tbsp (optional)

Procedure:    

Take a serving plate. smash two Cutlets.. add channa masala, green chutney and sweet chutney..
Top it with finely chopped big onions , chat masala and omam podi.. 
Enjoy your chat!!

Quick Tips:

I didn't add yogurt..  You can add it if you like the sour taste... If you couldn't find omam podi can use Aloo bhujia..

Samosa Channa Chat is the one, which we used to order when we visit a chat shop.. If you have samosas and channa masala its more assembling only.. Here's the recipe..

Ingredients:


Vegetable Samosa            - 2
Channa Masala                 - As needed
Green Chutney                  - 1 tbsp
Sweet Chutney                  - 1 tbsp
Big Onion                          - 1 small
Chat Masala                       - 1 tsp
Omam podi                        - As needed    
Yogurt                                - 1 tbsp (optional)

Procedure:    

Take a serving plate. smash two samosas.. add channa masala, green chutney and sweet chutney..
Top it with finely chopped big onions , chat masala and omam podi.. 
Enjoy your chat!!

Quick Tips:

I didn't add yogurt..  You can add it if you like the sour taste... If you couldn't find omam podi can use Aloo bhujia..

This versatile chutney is used with sandwiches, chat items etc.. Its easy to prepare.

Green Chutney


Ingredients:


Coriander Leaves              - 1 cup
Mint Leaves                      - 1/2 cup
Green Chillies                   - 2
Ginger                               - A Small Piece
Sugar                                 - 1/4 tsp
Salt                                    - 1 tsp
Lemon Juice                      - from half lemon

Procedure:

Blend everything in  a blender

lemon juice is used to retain the colour.. Store and use as required.

Sweet Chutney For Chat Items ( Tamarind Dates Chutney With Step-Wise Pictures)


Its the sweet chutney which is usually served with chat items.. Its sour as well as sweet.. Just soak tamarind ahead of time.. the recipe follows..

Ingredients:

Tamarind                   - 1/4 cup
Jaggery                      - 1/4 cup (vellam)
Dates                          - 10
Chilli Powder             - 1 tsp
Cumin Powder           - 1/2 tsp
Dry Ginger Powder    - 1/2 tsp

Procedure:

Soak tamarind in hot water.. Take out seeds from dates..
Add water to jaggery in a sauce pan and let it boil.

Boil till jaggery dissolves and filter it.. This is done to avoid impurities.

Take a pan.. Add tamarind extract, jaggery water, dates and all the powders. Let it boil. Add salt and sugar.

Boil the mix till it reaches thick consistency.

smash the dates well and filter it.. 
your sweet chutney is ready!!!

Samosa can be easily prepared at home.. Just handful of ingredients. For folding i used samosa mould.. You can also fold with your hands too..  here is the receipe.. then why to buy samosas from shops where they are prepared unhealthily when you can prepare healthily at home..!!!


Vegetable Samosa



Ingredients:


Mashed Boiled Potato                              - 2 cups
Boiled Peas                                              - 1/2 cup 
Finely Chopped Carrot                             -1
Finely  Chopped Big Onion                      - 1
Salt                                                           - As required
Chilli Power                                              - 3 tsp
Cumin powder                                          - 1 tsp
Coriander Powder                                    - 2 tsp
Garam Masala Powder                             - 1 tsp
Finely Chopped Ginger                            - 1 tsp
Finely Chopped Coriander                        - Few

For Outer layer:

Maida                                                        - 1 cup
Salt                                                            - As required
Chilli Powder                                            - 1/2 tsp
Turmeric Powder                                      - pinch


Procedure:


In a bowl add all the ingredients and smash it well.

Take another bowl. Add everything under ' for outer layer' . Add water in small quantities and bind it like Chapathi dough. Allow it to rest for some time. Make a small ball out of it and roll it. Keep it on a mould.

Take some mashed vegetables  and place it on the mould.

Close it and remove the excess dough.

Fry it in oil.. Your samosa is ready.. Enjoy with Tomato Ketchup!!!

Making kids eating vegetables is a very tough job for mothers in most of the houses. Kids will eat vegetables if you give them in the form of cutlet. I have added Channa for additional protein. 

If you are concerned more about health , you can shallow fry them on a dosai pan or you can even grill  it. We used to do shallow fry only ,at home.

Ingredients:


Mashed Boiled Potato                              - 2 cups
Boiled Channa                                          - 1 cup
Boiled Peas                                               - 1/2 cup 
Finely Chopped Carrot                             -1
Finely  Chopped Big Onion                      - 1
Bread crumbs                                            - 2 tbsp
Salt                                                            - As required
Chilli Power                                              - 3 tsp
Cumin powder                                           - 1 tsp
Coriander Powder                                     - 2 tsp
Garam Masala Powder                              - 1 tsp
Finely Chopped Ginger                             - 1 tsp
Finely Chopped Coriander                        - Few

For Outer layer:

Maida                                                        - 2 tbsp
Salt                                                            - As required
Chilli Powder                                            - 1/2 tsp
Turmeric Powder                                      - pinch
Bread Crumbs                                           - 4-5 cups

Procedure:


  1. In a bowl add all the ingredients and mix it well. ( pictures 1, 2)
  2. Take  a small bowl. Add everything under ' for outer layer' except Bread crumbs. Add water in small quantities. The maida batter should be thick only. ( picture 3)
  3. Take a ball out of the channa n vegetable mix and mould it into the desired shape.
  4. Dip that into maida batter and take out instantly. Place it in the bread crumbs plate. Roll the vegetable mix in the bread crumbs so that bread crumbs sticks to all parts of it. ( picture 4)
  5. Fry in oil and serve it with ketchup.


Quick Tips


  1. Increase the amount of bread crumbs, if your vegetable , channa mix is moist in step1.  Cutlet will absorb more oil, if the mix is moist.
