Saamai Arisi Dosai (Little Millet Rice Dosai)

Yes!! It's another Crispy ,Tasty and  healthy Millet dosai. Dosai with a millet which has very high Iron content. Its none other than Little Millet Dosai (Saamai Arisi Dosai). One of the best ways to include healthy Saamai Arisi. The recipe follows..

Yields : 25 Dosai

Preparation Time : 5 Minutes + Time for Grinding and Fermentation

Ingredients:

Little Millet      - 1 cup (Saamai Arisi)
Idli Rice            - 1 cup (Idli Arisi)
Urad Dal           - 1/2 cup
Toor Dal            - 1 tsp (Thuvaram Parupu)
Channa Dal       - 1 tsp (Kadalai Parupu)
Salt                    - As required
Gingely Oil       - As required

Procedure:


  • Soak Saamai Arisi ( Little Millet), Idli Rice, Urad dal, Toor dal and Channa dal for 4 to 5 hours.
  • After that grind it to a smooth batter along with little salt. Let the batter ferment overnight or for at-least 8 hours.
  • After the batter has fermented, heat a dosai pan. Grease it with oil. I always prefer Gingely oil for dosai. Add batter to pan and expand it. Apply oil to it. Once both sides are done, remove from flame and serve it hot. 
  • Serve it with hot sambar and Chutney of your choice. We had this dosai with Kadappa.

Today's recipe is very healthy and tasty Dosai  with Barnyard Millet (Kuthiraivali Arisi), a Millet which has lowest carbohydrate content among all the millets.  The recipe follows..

Yields : 25 Dosai

Preparation Time : 5 minutes + Time for Grinding and Fermentation

Ingredients:


Kuthiraivali Arisi Dosai           - 1 cup (Barnyard Millet)
Idli Arisi                                   - 1 cup (Idli rice)
Urad Dal                                   - 1/2 cup
Toor Dal                                   - 1 tsp
Channa Dal                               - 1 tsp
Salt                                           - As required
Gingely Oil                              - As required

Procedure:


  • Soak Kuthiraivali rice, Idli rice, Urad dal, Toor dal and Channa dal for at-least 4 to 5 hours.
  • Then grind it with little salt. Let batter ferment overnight or for 8 hours.
  • After that heat a dosai pan. Grease it with oil. Add ladle of batter to pan and expand it. Add some more oil. Once its done on both sides, remove from pan and serve it.
  • Enjoy it with Sambar and Chutney of your choice.
  • I served it with Coriander - Coconut chutney.

Want a healthier snack to munch on?? Here is Ragi Pakoda especially for you. Its not only healthier, its tastier too. It will be very much crispier just like Gram flour pakoda (Kadalai Maavu pakoda).  Over to the healthier Ragi pakoda recipe..

Preparation Time : 15 minutes


Ingredients:


Ragi Flour            - 1 cup (Keppai Maavu / Kelvaragu Maavu)
Rice Flour            - 3/4 cup (Arisi Maavu)
Asafoetida            - a pinch (Hing/Perungayam)
Salt                        - As required
Chili Powder         - 1 tsp
Small Onion          - 3
Green Chili            - 2
Curry Leaves         - few
Oil                          - For frying

Procedure:


  • Chop Small onions and Green chilies. Crush curry leaves.
  • Take a bowl. Add ragi flour, rice flour, asafoetida, salt, chili powder, chopped onions, green chilies, crushed curry leaves to it.
  • Mix everything well. Heat 2 tbsp of oil. Add hot oil to the bowl. Mix it with the flour. Sprinkle water and mix it. You must add very little water, JUST ENOUGH to hold the flour together. Adding hot oil and adding very little water is the key secret for getting crispier pakodas.
  • Heat oil in a pan. When the oil is hot, deep fry pakodas. Enjoy your pakodas hot!!

As i always mention, tastiest and easiest way of including millets in our diet is in the form of Idli or Dosai. Today's recipe is an interesting recipe with Kuthiravali Arisi (Barnyard Millet) ,which has low glycemic index and hence its too good for controlling Diabetes. The recipe for super soft and fluffy Kuthiraivali Arisi Idli follows..

Yields       : 25 idlis


Preparation Time : 15 minutes + time for Grinding & Fermentation


Ingredients:


Kuthiraivali Arisi    - 3 cups (Barnyard Millet)
Urad Dal                  - 3/4 cup 
Fenugreek Seeds  - 2 tsp (Vendhayam)
salt                            - As required

Procedure:


  1. Soak Kuthiraivali Arisi (Barnyard Millet) and Fenugreek seeds for at-least 3 hours. Soak Urad Dal separately for an hour.
  2. Grind  Kuthiraivali arisi (Barnyard Millet)  and vendhayam (Fenugreek Seeds) to a smooth batter. Grind Urad Dal separately.
  3. Mix both well and add also enough salt.
  4. Let it ferment for 1 whole night.
  5. The next morning, Grease the idli plates.. Pour in batter and steam idlis.
  6. Enjoy your hot steaming Idlis with Sambar Chutney Of Your Choice.

Kambu Dosai (Bajra Dosai or Pearl Millet Dosai)

Today's recipe is crispy, tasty and healthy Kambu Dosai. Instead of preparing dosai with Kambu Maavu (Bajra flour/ Pearl Millet flour), this method uses whole kambu in the preparation and hence it results in very much crispier dosai.. Kambu is soaked with rice and dal and it is ground to a batter along with spices.  The recipe follows..




Yields : Around 40 Dosai


Preparation Time : 15 minutes + soaking time +Grinding Time


Ingredients:


Kambu                    - 2 cup (Bajra or Pearl Millet)
Idli Rice                   - 1 cup (Idli Arisi)
Urad Dal                  - 1/4 cup (UlundamParupu)
Fenugreek Seeds  - 1 tsp (vendhayam)
Small Onion            - 6 to 8
Red Chili                  - 4
Cumin Seeds           - 1 tsp (Seeragam)
Curry Leaves            - few
Salt                             -  As required
Gingely Oil                - For Dosai

Procedure:


  • Peel small onion.
  • Soak Kambu, Idli Rice, Urad Dal and Fenugreek seeds together for 2 to 3 hours. 
  • After that, take a blender. Grind small onions, Red chili and Cumin seeds for a while and after that add everything which we soaked before to blender. Add also enough salt. Grind everything together. Now our Dosai batter is ready. Let the batter ferment overnight.
  • In the morning heat the Dosai pan. Grease it with gingelly oil. Add the batter to the pan and expand it. Apply oil to it.. Once both sides are done, remove from the pan and serve it!!!
  • Serve it hot with sambar and Chutney of your choice. I served it with

Thinai Arisi - Agathikeerai Kuzhi Paniyaram (Foxtail Millet - August tree leaves Kuzhi Paniyaram)

Thinai Arisi - Agathikeerai Kuzhi Paniyaram Today's recipe is an innovative kuzhi paniyaram prepared with Thinai arisi (foxtail millet) and Agathikeerai (August tree leaves).

Thinai arisi is one of the best millets for diabetics since it slowly releases sugar into blood stream. It is rich in phytic acid which reduces cholesterol level and it is also rich in phytate which reduces cancer risks. To add the goodness i have added agathi keerai to it which is rich in calcium and Iron and hence its essential for bone strength.

This recipe is the best and tastiest way to include both millet and keerai in our diet. The recipe follows..

Yields : Around 25 Kuzhipaniyaram


Preparation Time : 10 minutes + Time for Grinding and Fermentation

 Ingredients:  

Thinai Arisi                                   - 1 cup (Foxtail millet)
Agathi Keerai                               - 3 handful (August Tree leaves)
Urad dal                                       - 1/4 cup
vendhayam ( fenugreek seeds)   - 1/4 tsp
Salt                                               - very little 
Mustard Seeds                             - 1/4 tsp
Urad Dal                                       - 1/4 tsp
Channa Dal                                  - 1/4 tsp
Big onion                                       -1
Chopped Green Chilies                - Few
Chopped Ginger                            - Few


Procedure: 


  • Soak everything Thinai Arisi, Urad dal, vendhayam for at-least 5 hours. Then grind it. Let the batter ferment for the whole night.
  • Wash well agathi keerai. Heat oil in a pan, add mustard seeds, urad dal and channa dal to it. When they turn golden brown add chopped onions, chopped green chili, chopped ginger to it. After the onions turn translucent, add agathi keerai to it saute for 3 minutes and then add everything to the batter. Add also enough salt. 
  • Heat a paniyaram pan.. Add Gingely oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!
  • I am serving it with Tomato Garlic Chutney.

Chola Dosai (Jowar Dosai)

Chola Dosai Cholam (Jowar)  crop requires only one fourth of the water required by rice crop and half of the water required by wheat crop. So when you are eating Cholam, you are also doing good to the planet..

Cholam is rich in Phosphorus which is essential for the development of bones. It also helps to burn fat and sugar, hence it helps in good functioning of heart and kidneys.

Today's recipe is tasty Dosai recipe with  healthy Cholam.. The recipe follows..

Preparation Time : 5 minutes + Time for Grinding and Fermentation


Ingredients:


Cholam              - 1 cup  (Jowar)
Idli Rice              - 1 cup
Urad Dal             - 1/2 cup
Toor Dal             - 1 tsp
Channa Dal         - 1 tsp
Salt                      - As required
Gingely Oil         - As required


Procedure:

  • Soak Cholam,,idli rice,urad dal, toor dal and channa dal for atleast 4 - 5 hrs.
  • Then grind it along with salt. Let the batter ferment overnight or at-least for 8 hours.
  • After batter has fermented, Heat a dosai pan.. Grease it with oil.. add the batter to the pan and expand it like Dosai.. Apply oil to it.. Once both sides are done, remove from the flame and serve it!!!
  • Serve it hot with sambar and Chutney of your choice.

Instant Ragi Dosai

Instant Ragi Dosai Today's post is for one of our blog followers who had asked for Instant Ragi dosai recipe.  We can prepare it in either of the two ways. First method is mixing up of Dosai batter with Ragi flour whereas I have posted the second method, which doesn't use rice by any means. Hence its more healthier. I have added also grated carrots to make the dosais much more healthier . Over to the recipe..

Yields  : 10 - 12 Dosais


Ingredients:


Ragi Flour             - 1 cup
Urad Dal                - 1/4 cup
Big Onion              - 1 (small)
Carrot                     - 1 (medium size)
Chopped Ginger     - 2 tsp
Green Chili             - 1
Curry leaves            - few
Salt                          - As required
Gingely Oil             - For making dosais

Procedure:


  • Soak Urad dal for 30 minutes and grind it to a smooth batter. Finely chop Onion, Green Chili and Curry leaves. Grate carrots.
  • Take a bowl. Add Ragi flour, Urad dal batter, chopped onions, ginger, green chili, curry leaves and enough salt to it.
  • Add water in small instances and start mixing the batter. The batter should be of Dosai batter consistency. Start preparing Dosais after 30 minutes.
  • Heat a Dosai pan. Pour a laddle of batter to it. Expand it like dosai. Add Gingely oil.
  • When its cooked on one side, slowly turn it to the other side.
  • Serve the dosai after its cooked on both the sides. Enjoy your Dosai hot with Chutney of your choice.

Thinai Arisi Dosai (Foxtail Millet Dosai)

Thinai Arisi Dosai I have been receiving a number of queries from our Blog followers regarding Millet recipes. I am hearing that Many of their family members didn't prefer to eat millets and they requested me to help on it. The basic reason why most of the people don't like  Millets is because of its peculiar taste; I would suggest to include the millets  in the form of  Dosai, Idli , Uthapam or Paniyaram instead of preparing pongal or variety rice with it.  This method has worked for us and I bet your family members too will  love it.

Last week i had prepared Batter for Rice Idli ; The batter looked very odd and whitish to me. I was worried what went wrong and suddenly it came to my mind that its been a long time I had prepared Rice Idli batter. Since everyone in our home including my kid started liking millets, I never thought  of Rice Idli or Dosai. Millets Idli and Dosai have replaced our Rice Idli and Dosai Try this method... It is one of the best ways to include millets in your diet.

Today's recipe is tasty Thinai Arisi Dosai..

Ingredients:


Kambu                      - 1 cup (Bajra / Pearl Millet)
Raw Rice                  - 1/2 cup (Pacharisi)
Toor Dal                   - 1/4 cup (Thuvaram Parupu)
Channa Dal               - 1/4 cup (Kadalai Parupu)
Urad Dal                    - 1/4 cup (Uluntham Parupu)
Red Chili                   - 2
Coriander Seeds        - 1/4 tsp (Malli)
Cumin Seeds             - 1/4 tsp (Seeragam)
Black Pepper             - 6 to 8 (Milagu)
Big Onion                  -1
Curry Leaves             - few
Salt                            - As required
Gingely Oil               - For making Adai

Procedure:



  • Soak Kambu, Raw rice, Toor dal, Channa Dal and urad dal together for 2 hours. Chop Big onion and curry leaves finely.
  • After 2 hours, take a mixer- grinder. Grind Red chili, Coriander seeds, Black pepper and cumin seeds for a while and after that add everything which we have soaked before.
  • Grind everything together along with little salt. Add also chopped onions and curry leaves to the batter.
  • Heat a dosai pan. Spray little oil to it. Add batter to the pan and expand it. Apply oil to it. Once your adai is done on both sides remove from the pan and serve it hot.
  • Enjoy it with sambar and Chutney Of Your Choice.

Yields : 50 Kuzhipaniyaram


Preparation Time : 10 minutes + Time for Grinding and Fermentation

 Ingredients: 

For Batter: 

Cholam                                        - 1 cup
Urad dhal                                     - 1/4 cup
vendhayam ( fenugreek seeds)   - 1/4 tsp
Salt                                              - very little 

For Seasoning:

Mustard Seeds                              - 1/4 tsp
Urad Dal                                        - 1/4 tsp
Channa Dal                                   - 1/4 tsp
Big onion                                        -1
Chopped Green Chillies                 - Few
Chopped Coriander                        - Few
Chopped Curry Leaves                  - Few
Chopped Ginger                             - Few


Procedure: 


  • Soak everything under 'For Batter' for at-least 5 hours. Then grind it. Let the batter ferment for the whole night.
  • Do the seasoning, and add it to the batter.
  • Heat a paniyaram pan.. Add Gingely oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!
  • I am serving it with Garlic Chutney.

Keppai Roti is one of the very healthy breakfast recipes. It can be prepared in less than 15 minutes. Its a natural source of Calcium supplement thus it increases Bone strength. To make it nutritionally high, i have also added vegetables. 

Here is the wholesome healthy, filling Breakfast..

Makes   : 5 Rotis

Preparation Time : 15 minutes

Ingredients:

Ragi Flour                   - 1 cup
Grated Carrot              - a handful
Grated Cabbage          - a handful
Big Onion                   - 1 (small)
Green Chili                 - 1
Curry Leaves              - few
Salt                              - As required
Oil                               - for Rotis

Procedure:

  • Chop Big onion, Green chili and curry leaves finely.
  • Take a bowl. Add flour, vegetables, onion, curry leaves and salt to it.
  • Add water in small instances and start kneading the dough. The dough should be of Chapathi dough consistency.
  • Take a plastic sheet and grease it with oil. Grease your hands as well. Take a lemon size dough and place it on  a sheet. Tap it well with your hands.
  • Greasing the sheets with oil is must. since it helps with easy transfer of roti to dosa pan. 
  • And the roti should be very thin or else roti will be very hard to eat.
  • Heat Dosa pan. Transfer rotis from sheet to the pan. Heat in high flame.
  • When its done on one side, flip to other side and cook well on both sides. Add little oil.
  • Serve it hot when roti is fully cooked. From my personal experience it tastes good with Moong Dal Sambar.

  1. Soak Thinai Arisi, Urad Dal and Fenugreek seeds for atleast 3 hours. Grind it well with salt

Summer has started... Drinking koozh, really helps us to prevent from getting dehydrated. And adding all the nutrients, here is the healthy koozh recipe.. Prepare it before night. Mix it with Buttermilk in the morning and have it along with small onions, Green Chillis and  Brinjal Kuzhambu.. You will feel really fresh and cool all day long..

Here is the perfect summer breakfast recipe..

Ingredients:

Ragi Flour                  - 1 cup
Cooked Rice              - 1/2 cup
Salt                             - As required
ButterMilk                  - As required

Procedure:

  • Take a heavy bottomed vessel. I usually prefer my cooker. Add enough water and salt to the  Ragi flour. Enough water should be added to obtain dosai batter consistency. Mix well and keep it aside for 1 to 2 hrs. This is done for fermenting the flour.
  • After that, measure ragi flour mix. Now add same amount of water to the ragi  flour mix, add also cooked rice and start cooking the koozh. You can also skip adding cooked rice. It just gives additional taste.
  • Keep on stirring in between or else the koozh may get burnt in the bottom. Cook in medium flame untill its  cooked. Once koozh changes its color, i.e when it becomes dark brown color, it indicates that its cooked.
  • switch off the flame and  let the koozh ferment for the whole night. Fermenting enhances nutritional benefits. You can also prepare in the morning and drink immediately.
  • The next morning, take out  liitle koozh in a vessel. add enough buttermilk and dissolve it.  Enjoy it with small onions, Green chillies or Brinjal Kuzhambu For Koozh
  • You can also have koozh as such, without dissolving in buttermilk, along with  Brinjal Kuzhambu.
  • Enjoy your healthy breakfast..

I prepared a kara paniyaram with this millet. I also added vegetables to it. Hence its a highly nutrition packed food. Have it for a complete Breakfast. Here is the recipe!!!

Yields : 50 Kuzhipaniyaram


Preparation Time : 10 minutes + Time for Grinding and Fermentation

Ingredients:


Kambu                - 1/2 cup (Pearl Millet)
Idli Rice              - 1/2 cup (Idli Arisi)
Raw Rice            - 1/2 cup (Pachharisi)
Urad Dal             - 1/4 cup 
Fenugreek Seeds - 1 tsp  (Vendhayam)
Carrot                  - 1 (medium size)
Cabbage              - 1/4 cup (chopped)
Onion                  - 1 (medium size)
Salt                      - As required
Turmeric Powder- 1/4 tsp
Chilli Powder      - 1/2 tsp
Oil                       - As required

Procedure:

  • Soak kambu, Idli rice, Raw rice and Fenugreek seeds for 4-5 hours. After that, grind everything to a smooth batter. Let the batter ferment over nite.
  • Chop finely carrot, cabbage and onion.
  •  Add chopped vegetables, turmeric powder, chilli powder and enough salt to the batter. Now our batter is ready.
  • Heat a paniyaram pan.. Add oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!
  • Serve with Chutney Of Your Choice. I served it with Tomato Garlic Chutney..

Varagu Arisi is one of the oldest crops that are cultivated in India. According to experts, it has been cultivated for about 3000 years.. The specific characteristic of this millet is its one of the few foods that has Thiamine. Thiamine is nothing but Vitamin B1, hence its used for preparing B Complex tablets.. Lack of Thiamine is one of the reasons for Alzheimer disease, a short term memory loss disease  which we will get  when we grow old. 

Start including this healthy millet and prevent the risk of Vitamin B1 deficiency.. I prepared a dosai with this millet, It was super crispy and tasty. Just prepare this, your family won't believe that its a millet dosai. Very tasty Dosai indeed. A must try recipe!!!

Yields : 25 Dosai


Preparation Time : 5 minutes + Time for Grinding and Fermentation

Ingredients:


Varagu Arisi       - 1 cup  (Kodo Millet)
Idli Rice              - 1 cup
Urad Dal             - 1/2 cup
Toor Dal             - 1 tsp
Channa Dal         - 1 tsp
Salt                      - As required
Gingely Oil         - As required

Procedure:

  • Soak varagu arisi,idli rice,urad dal, toor dal and channa dal for atleast 4 - 5 hrs.
  • Then grind it along with salt. Let the batter ferment overnight or for at-least 8 hours.
  • After the batter has fermented, Heat a dosai pan.. Grease it with oil.. add the batter to the pan and expand it like Dosai.. Apply oil to it.. Once both sides are done, remove from the flame and serve it!!!
  • Serve it hot with sambar and Chutney of your choice.
  • I served it with Ellu Chutney

My kid is a great lover of muruku.. My Mother In Law is an expert in preparing muruku..  When we are about to visit our native, She used to ask my  kid,  what he wants,.. He always  says that he wants muruku .. . He is such a lover of muruku.. When i prepared this ragi muruku for the first time, he asked me, amma, will it turn to yellow?? And he said that he didn't want the black muruku.. he wanted only the yellow one..  I was explaining him that this  muruku is very healthy and he should eat this.. After  tasting  the muruku, he started enjoying it.. He was telling, Amma, Healthy muruku is super ma!! .. Yes indeed this muruku is very tasty and crispy...Here is that super recipe..

Ingredients:

Ragi Flour          - 2 cups
Rice Flour          - 1 cup
Fried Gram         - 1/2 cup (pori kadalai)
Salt                     - As required
Chilli Powder     - 2 tsp
Asafoetida          - a pinch
Sesame Seeds     - 1 tsp
Oil                      - For frying

Procedure:

  • Grind fried gram to powder.
  • Mix all the ingredients together. Add 2 tbsp of hot oil to the muruku flour. By doing so, muruku will be crunchy and it won't absorb oil too. Adding oil is enough and  no need to add butter/ dalda. But if you wish for the flavor can add.

  • Add water in small instances and start kneading.  Knead it like chapathi dough.

  • Take a muruku press. Take the star shaped plate with a single hole as below.

  •  Grease a plastic sheet with little oil.. Insert muruku flour in the muruku press and start pressing. Slightly rotate in the clockwise dirction.

  • Heat oil in a pan.. When the oil is hot, slightly drop muruku in the oil.. When its cooked on one side, flip it to the other side.. As the muruku itself is  brown in color you can't find whether it is cooked or not by its color. When the bubbles in the oil reduce,it shows muruku is cooked.
  • Take it from oil, Drain it on a paper towel and serve it.
  • If you don't have much patience to do with the single hole muruku, replace it with a three hole  star shaped muruku plate.

  • Fill the muruku press and start pressing..Enjoy this tasty and healthy Muruku..

Regular intake of kambu reduces the chances of Gallstones and Breast Cancer.. It also reduces the effect of Wheezing and Asthma in Children..It can be easily digested than whole wheat flour.. So don't use it as only Bird Food.. Here is the tastiest way to include Kambu in our food..

Preparation Time : 15 minutes + Time for Grinding and Fermentation


Ingredients:


Kambu (Pearl Millet)   - 1 cup
Idli Rice                                  - 1 cup
Urad Dal                                 - 1/2 cup
Salt                                          - As Needed

For Seasoning:

Mustard Seeds                        - Few
Urad Dal                                 - Few
Broken Red Chillies               - 1
Chopped Ginger                     - Few
Curry Leaves                          - Few
Coriander Leaves                    - Few

Procedure:


  1. Soak kambu, Rice and Urad Dal for atleast 3 hours. Grind it well with salt
  2. Let it ferment for 1 whole night.
  3. Do the seasoning and add it to the batter.
  4. Grease the idli plates.. Pour in batter and cook idli.
  5. Serve it with sambar and chutney of your choice. I am serving it with Mint-Tomato Chutney and Peanut Chutney.

Ragi is one Ragi is one of the most nutritious food and one of the easy one to to digest. It is rich in calcium and protein and also have good amount of iron and other minerals. It is low in fat most of which are unsaturated fats..
Try this interesting version of ragi which is very tasty and healthy.. For binding we are using Wheat flour. (Atta flour). So the cookies as such is very nutritional.

Ingredients:


Ragi Flour                                     - 1/2 cup
Whole Wheat Flour                       - 1/2 cup
Powdered Sugar                           - 1/4 cup
Butter                                            - 1/2 cup
Salt                                                - a pinch
Baking Powder                             - a pinch
Vannila essence                            - a pinch


Things Needed:


1. Hand Blender


Procedure:


  1. Blend butter and Powdered sugar.
  2. Add sieved flours to it. Don't knead it.
  3. Make balls out of it.
  4. Pre heat oven to 180 degree Celsius.
  5. Place the balls in a greased baking tray.
  6. Press balls using a fork.
  7. Bake for 12 - 15 minutes.
  8. Enjoy with hot tea..
