Chicken Fried Noodles (Chicken Mee Goreng)

How many Noodles lovers out there?? Presenting very much spicy and palatable  Chicken Fried Noodles recipe, a delicious dish of Southeast Asia. Give a try to this recipe once, you will surely fall for it. Here you go!!

Recipe For  : 2 


Preparation Time : 30 minutes + Marination Time for Chicken


Ingredients:

 

Noodles                      - 250gm
Egg                             - 2
Big Onion                   - 1
Tomato                       - 1
Garlic Pods                - 6-7
Spinach                       - a handful   (Pasalai Keerai)
Tomato Ketchup         - 1 tbsp
Soya Sauce                - 3 tbsp
Red Chili Paste          - 2 tbsp
Salt                               - As required
Oil                                 - 2 tbsp

For Fried Chicken:

Boneless Chicken    - 100 gm
Ginger-Garlic paste  - 1 tbsp
Salt                              - As required
Turmeric Powder       - a pinch
Chili Powder               - 1 tsp
Oil                                 - 1 tbsp

Procedure:

  • You can use Hakka noodles or any noodles which is big and round for this recipe. Using appropriate noodles is very essential for this recipe.
  •  First step is cooking noodles. For that add some water to a pan. When it starts boiling, add noodles to it.. Add some salt and oil.. Let it boil for another 10 minutes. When you take out the noodles, you should be able to mash up with fingers.. Yes!! now your noodles is ready.. If you are using pre cooked noodles just leave this step.
  • Chop onions, garlic and tomato very fine. Pick leaves from spinach and wash it. . Keep all the sauces ready..
  • Chop boneless chicken into small chunks. Marinate it with Ginger-Garlic paste, salt, turmeric powder and chili powder for about an hour. After that shallow fry chicken in little oil and take it out in a plate.
  • Add some more oil to the same pan. Add chopped onions and garlic.. Saute till onions turn translucent.  Beat  eggs and add it to the pan.
  • After the eggs are cooked, add chopped tomato.
  • When it is cooked, add spinach.. Wait till the spinach cooks well..
  • Then add salt, tomato ketchup, soya sauce and Red Chilli Paste.. Mix everything well.
  • Add cooked noodles to it.. Saute it well so that sauce gets stick to the noodles.. Saute it in high flame, until the noodles turn dry..
  • Add Fried chicken to it.. Mix it with Noodles..Traditionally its served with cucumber, tomato and lime.. Enjoy your Chicken Fried Noodles!!!

Egg Noodles

Noodles had been one of our fantasies during our childhood. We tasted noodles for the first time in a restaurant at our native. Though i have tasted many noodles till now, i would always say that was the best noodles i ever had. Very much Indianized noodles. Such interesting recipe follows..

Recipe For : 2

Preparation Time : 20 minutes

Ingredients:


Noodles                  - 150 gm
Egg                         - 2
Big Onion               - 1 (medium size)
Carrot                     - 1 (medium size)
Chopped Cabbage  -  a handful
Capsicum                - 1
Spring Onion          - 1 bunch
Garlic Pods             - 6 to 8
Salt                          - As required
Pepper powder         - As required
Tomato Ketchup      - 2 tbsp
Oil                            - 2 tbsp

Procedure:


  • Since i have used dried noodles, i boiled it in enough water along with needed salt and a tsp of oil for 10 minutes. I drained excess water after that.
  • Chop carrot , Capsicum and cabbage into thin strips. Chop Big onion,  Garlic and Spring onions finely. 
  • Heat oil in a pan. When its hot, add chopped onion, garlic and spring onion. Beat eggs.
  • After the onions turn translucent, add eggs. After it has been cooked add all the vegetables.
  • Add enough salt, pepper powder and tomato ketchup. For the spiciness you can also use Red chili paste.
  • Add cooked noodles and mix everything well. Saute for two minutes in high flame and then switch it off.
  • You can prepare this noodles without egg also. You can also add fried chicken to this noodles.
  • Garnish with spring onions and enjoy your noodles..

Bored of regular Semiya Uppuma?? Try this my version of Semiya Noodles. This is one of favorite recipes of my kid.. I am sure all the kids will love this recipe..

Here is that kids friendly recipe..

Ingredients: (Recipe For 2)

Semiya                     - 1 cup   (Vermicelli)
Big Onion                - 1
Garlic Pods              - 5
Carrot                      - 1 (small size)
Chopped Cabbage   - 1/4 cup
Red Chilli Paste       - 1 tbsp
Salt                           - As required
Turmeric Powder     - 1/4 tsp
Cumin Powder         - 1/2 tsp
Coriander Powder    - 1/2 tsp
Pepper Powder         - 1/4 tsp
Garam Masala          - 1/4 tsp
Oil                            - As required
Coriander Leaves     - For furnishing

Procedure:

  • Dry Roast semiya and cook in 2 cups of water.
  • Chop onion lengthwise. Finely chop Garlic pods. Grate carrot and cabbage.
  • Heat oil in a pan. Add chopped onion and garlic.
  • When they are translucent, add Red Chilli Paste.
  • Add grated carrot and cabbage, after the raw flavor of red chilli paste goes off.
  • Add cooked semiya and also salt, pepper powder,cumin powder, add coriander powder.
  • Mix well. Switch off the flame after all the masala mixes with the semiya. Add Garam Masala Powder.
  • Garnish with coriander leaves and serve the noodles hot..

           Any Entrepreneurs out there?? Thinking of starting a restaurant??  If you start serving  Mee Goreng   in India, it will be a Super-Duper  hit.. Those who love Briyani will love this mee for sure,

            Mee Goreng literally means 'Fried Noodles'.. Its a famous food among South-East Asian countries.. Its a spicy , aromatic and taste-buds tingling noodles, cooked well in soya sauce,red chilli paste and spinach.. , 

            Special noodles  are available at stores here  for preparing this mee.. If you are trying in India, Get plain Egg noodles from stores.. Noodles should be round and big.I tried this once with Hakka Noodles, and it was a utter flop.. so using appropriate noodles is essential.. 

I added tofu which is nothing but Soya Paneer to it.. Here is the recipe..

Ingredients: (Recipe For 2)

Noodles                      - 250gm
Fried Tofu                  - 100 gm
Big Onion                   - 1
Tomato                       - 1
Garlic Pods                 - 6-7
Spinach                       - a handful   (Pasalai Keerai)
Tomato Ketchup         - 1 tbsp
Soya Sauce                  - 3 tbsp
Red Chilli Paste           - 2 tbsp
Salt                               - As required
Oil                                - As required

Procedure:

  • As i mentioned earlier, using appropriate noodles is very essential.. This is the noodles, which we have to use for mee.

  • This is a Pre- Cooked noodles. So i started preparing mee goreng instantly. If you are at India, buy Egg Noodles. See to that its big and round..Cook the noodles before start preparing the mee 
  • This is the step for cooking dry noodles: Add some water to a pan. When it starts boiling, add noodles to it.. Add some salt and oil.. Let it boil for another 10 minutes. When you take out the noodles, you should be able to mash up with fingers.. Yes!! now your noodles is ready..
  • Chop onions, garlic and tomato very fine. Pick leaves from spinach and wash it. . Keep all the sauces ready..
  • Heat oil in a pan. Add chopped onions and garlic.. Saute till onions are translucent. And then add chopped tomato.
  • When both are cooked, add spinach.. Wait till the spinach cooks well..
  • Then add salt, tomato ketchup, soya sauce and Red Chilli Paste.. Mix everything well.
  • Add cooked noodles to it.. Saute it well so that sauce gets stick to the noodles.. Saute it in high flame, until the noodles is dry..
  • Add Fried Tofu to it.. You can also use paneer instead.
  • If you want Egg mee goreng, add egg after onions itself.. Add Fried Chicken instead of tofu, you will get chicken mee goreng..Here you go!!! Serve it hot..
  • Traditionally its served with cucumber, tomato and lime.. Enjoy your Mee Goreng!!!

Another kids friendly recipe.. Bread Noodles... yes!!! Noodles from Bread.. I have heard, many of my friends saying that their kids don't eat Whole meal bread because they don't like its taste.. Both white bread and whole meal bread has only same calories but whole meal bread is  very high in nutrition.. 

Actually whole wheat grain  has three layers. All purpose flour or Maida is prepared only with the inner part of the grain after removing the other two outer layers,, whereas whole meal flour is prepared by grinding the whole grain , without removing any outer layers. 

Tried preparing noodles out of whole meal bread.. it turned out super.. I used Indian spices for this noodles,, but if you want chinese flavor, can avoid Indian spices and use soya sauce and tomato ketchup instead.
You can try the recipe with white bread too..

Ingredients: (Recipe for 1)

Bread slices.          - 4
Onion                     - 1
Carrot                     - 1 (medium size)
Garlic Cloves         - 2
Salt                         - As required
Turmeric Powder   -  1/4 tsp
Sambar Powder      - 1 tsp
Tomato Keichup     - 1 tsp
Curry Leaves           - few

Procedure:

  • Dip bread in water.

  • Take it out immediately and squeeze water.

  • Knead it well like a dough.

  • Take a muruku press. Use a muruku press plate with holes slightly bigger than Idiyappam plate.

  • Press it on a Idli plate and steam it for about 10 minutes.

  • Finely chop onions, carrot and garlic pods.
  • Heat oil in a pan. Add Onions, Garlic and Curry Leaves.
  • After a minute, add carrots.
  • Add salt, turmeric powder and sambar powder..
  • Break steamed noodles and add it to the pan.
  • Mix well .. Keep the pan in low flame for about 5 minutes. Keep on stirring in between.
  • Serve it hot!!

Can you guess the food, which is high in salt content, high in unsaturated fatty acids, high in preservatives and dyes.. yes!! It's absolutely Instant Noodles.. My son is a great lover of Noodles.. Atleast once in two weeks he wants the noodles.. Thought to change this habit and found out this interesting recipe..

Its Chapathi Noodles!!!.. Noodles made from Chapathi. . Though the taste differs from that of instant one, its very tasty and healthy indeed!!! My Kid believed that its a type of noodles and named it Indian Noodles .. Here is that interesting recipe.. See, whether you can convince your child too!!!

Ingredients: (Recipe for One Person)

Chapathi                 -2
Big Onion               -1
Cabbage                  - 1/4 cup
Garlic Pods             - 2
Salt                          -As required
Turmeric powder     - 1/4 tsp
Chilli Powder          - 1/2 tsp
Tomato Ketchup      - 1tbsp
Coriander Leaves     - few

Procedure:

Chop both chapathis into lengthwise strips.. Finely chop Onions, Garlic and cabbage..
Heat oil in  a pan.. Add chopped Onions and Garlic.. After 2 minutes add chopped cabbage.
Add in salt, turmeric powder, chilli powder and tomato ketch up..mix it well.. 
Saute it well for 3-5 minutes..Garnish with coriander leaves and serve..

Quick tips:

You can add Carrots and Boiled peas too.. add an egg and turn it to  Egg noodles. .
