Rava Maida Paniyaram

Rava Maida Paniyaram
This Rava- Maida Paniyaram is also an important delicacy from our native. It has been our tradition to prepare this paniyaram in all the important occasions. You can prepare this paniyaram in a jiffy and you just three basic ingredients for this paniyaram. The recipe follows..

Yields: Around 20 Paniyaram

Ingredients:


Rava          - 1 cup
Maida         - 1 cup
Sugar         - 1 cup
Oil             - For frying

Procedure:

  • Take a bowl. Add Rava, Maida and sugar to it. Mix everything well. Add water in small instances and make a thick batter. Add very little water just enough to form the batter, or else batter will spread when you add it to oil and paniyaram will absorb oil too. 
  • Heat oil in a frying pan. When oil is really hot, take batter in small laddle (Preferably one deep laddle which is called as Kuzhi karandi in tamil) and add it to the hot oil. Paniyaram will start floating in oil in some time. When its cooked on one side, flip it to other side. 
  • See to that you add another laddle of batter to oil only after the  paniyaram which you added before starts floating in the oil or else both will stick to each other. 
  • Drain excess oil and enjoy your paniyaram!!

Ragi Kaara Kuzhi Paniyaram

Today's recipe is one of the tasty ways to include Ragi in our diet.  Very much tasty and interesting Kaara kuzhi paniyaram with ragi flour. You can prepare it instantly too.. Healthier recipe which can be prepared in easier and tastier way. The recipe follows..

Yields : Around 25 paniyaramIngredients:


Ragi Flour            - 1 cup
Urad Dal               - 1/4 cup
Salt                       - As required
Gingely Oil            - As required

For Seasoning:

Big onion                 -1
Green Chili              - 2 to 3
Coriander Leaves    - Few
Curry Leaves           - Few
Chopped Ginger      -2 tsp


Procedure: 

  • Soak Urad dal for about 30 to 40 minutes. After that grind it to a smooth batter.Finely chop Big onion, green chili, coriander leaves and curry leaves. 
  • Take a bowl. Add ragi flour, urad dal batter and enough salt to it.
  • Heat oil in a pan. Add everything under 'For seasoning'. Saute till they turn translucent and add it to the batter. Mix everything well. To increase the nutrients, you can also add grated or finely chopped veggies to the batter.
  • Heat a paniyaram pan.. Add Gingely oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!
  • I am serving it with Onion Tomato Dip..

Aval Kuzhi Paniyaram (Flattened Rice Kuzhi paniyaram)

Aval Kuzhi paniyaram This is the paniyaram recipe with a difference. This paniyaram will be very soft and spongy. You can find the difference just by touching it. The reason behind is the addition of Aval (Flattened Rice). No fermentation required for this paniyaram. One of the best paniyarams, I ever had..

Yields  : Around 20 paniyaram


Preparation Time : 15 minutes + Soaking time - 30 minutes


Ingredients:


Flattend Rice         - 1/2 cup (Aval)
Raw Rice               - 1/2 cup (Pacharisi)
Big Onion              - 1
Chopped Ginger    - 1 tsp
Green Chili            - 2
Curry Leaves         - few
Salt                         - As required
Oil                           - for paniyaram

Procedure:


  • Wash and soak flattened rice in a bowl for 30 minutes. Also wash and soak Raw rice in a separate bowl for 30 minutes. Finely chop Big onion, Green chili and Ginger. Crush Curry leaves.
  • After 30 minutes, take a Mixer-Grinder. Add soaked Raw rice to it and grind for a while. After that add soaked flattend rice and start grinding again.
  • Add enough water, salt and grind it into a smooth batter. Let the batter sit idle for 30 minutes.
  • After that add chopped onion, green chili and curry leaves to the batter.
  • Heat a paniyaram pan.. Add Gingely oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!! Serve it with Chutney Of your choice.

Preparation Time : 10 minutes + Time for Grinding and Fermentation

 Ingredients: 

For Batter: 

Cholam                                        - 1 cup
Urad dhal                                     - 1/4 cup
vendhayam ( fenugreek seeds)   - 1/4 tsp
Salt                                              - very little 

For Seasoning:

Mustard Seeds                              - 1/4 tsp
Urad Dal                                        - 1/4 tsp
Channa Dal                                   - 1/4 tsp
Big onion                                        -1
Chopped Green Chillies                 - Few
Chopped Coriander                        - Few
Chopped Curry Leaves                  - Few
Chopped Ginger                             - Few


Procedure: 


  • Soak everything under 'For Batter' for at-least 5 hours. Then grind it. Let the batter ferment for the whole night.
  • Do the seasoning, and add it to the batter.
  • Heat a paniyaram pan.. Add Gingely oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!
  • I am serving it with Garlic Chutney.

An exciting info about Kambu (Pearl Millet). This is the millet which has high Iron content. It has 24 times higher Iron content than that of Rice..

I prepared a kara paniyaram with this millet. I also added vegetables to it. Hence its a highly nutrition packed food. Have it for a complete Breakfast. Here is the recipe!!!

Yields : 50 Kuzhipaniyaram


Preparation Time : 10 minutes + Time for Grinding and Fermentation

Ingredients:


Kambu                - 1/2 cup (Pearl Millet)
Idli Rice              - 1/2 cup (Idli Arisi)
Raw Rice            - 1/2 cup (Pachharisi)
Urad Dal             - 1/4 cup 
Fenugreek Seeds - 1 tsp  (Vendhayam)
Carrot                  - 1 (medium size)
Cabbage              - 1/4 cup (chopped)
Onion                  - 1 (medium size)
Salt                      - As required
Turmeric Powder- 1/4 tsp
Chilli Powder      - 1/2 tsp
Oil                       - As required

Procedure:

  • Soak kambu, Idli rice, Raw rice and Fenugreek seeds for 4-5 hours. After that, grind everything to a smooth batter. Let the batter ferment over nite.
  • Chop finely carrot, cabbage and onion.
  •  Add chopped vegetables, turmeric powder, chilli powder and enough salt to the batter. Now our batter is ready.
  • Heat a paniyaram pan.. Add oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!
  • Serve with Chutney Of Your Choice. I served it with Tomato Garlic Chutney..

A variation to sweet kuzhi paniyaram.. The same batter, Do seasoning, add it to the batter.. That's  it for kaara kuzhi paniyaram..

For Batter: 

Idli rice                                         - 1 cup
Paccharisi ( Raw rice)                 - 1 cup
Urad dhal                                     - 1/4 cup
Javvarisi ( Sago)                          - 1/4 cup
vendhayam ( fenugreek seeds)   - 2 tsp
Salt                                              - very little 


For Seasoning:

Big onion                                        -1
Chopped Green Chillies                 - Few
Chopped Coriander                        - Few
Chopped Curry Leaves                  - Few
Chopped Ginger                             - Few


Procedure: 


  • Soak everything under 'For Batter' for at-least 5 hours. Then grind it. Let the batter ferment for the whole night.
  • Do the seasoning, and add it to the batter.
  • Heat a paniyaram pan.. Add Gingely oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!
  • I am serving it with Onion Tomato Dip..

I have been a great fan of paniyaram since my childhood.. In the street corners of our native ,they used to sell vadai, paniyaram, aappam, in  the mornings,.An old lady sells those for about 30 years in our street and even now.. When I get a prize in our school, my dad used to ask me, what gift I wants from him ..I will say, I want paniyaram daddy.. lol!! ' Food is always everything for me'.. 

In those times, I used to think that making paniyaram is always a big thing.. and I learnt this recipe very first when i started cooking... here is the recipe..

 Ingredients: 



For Batter: 

Idli rice                                         - 1 cup
Paccharisi ( Raw rice)                 - 1 cup
Urad dhal                                     - 1/4 cup
Javvarisi ( Sago)                          - 1/4 cup
vendhayam ( fenugreek seeds)   - 2 tsp
Salt                                              - very little 


Others:

Gingelly Oil                                  - as required
Palm Jaggery                               - 2-2.5 cups  (Karupatti)
Chopped Coconut                       - a handful


Procedure: 


  • Soak everything under 'For Batter' for at-least 5 hours. Then grind it. Let the batter ferment for the whole night.
  • Grate Palm Jaggery.. Add little water to palm jaggery in a sauce pan and let it boil.
  • Boil it till palm jaggery melts and filter it using a strainer.
  • Add palm jaggery extract to the batter. Add chopped coconut to the batter.
  • Heat a paniyaram pan.. Add Gingely oil to it.
  • When its hot, add batter.. When the paniyaram is cooked on one side, slightly flip it to the other side.
  • Remove from heat when its cooked on both sides and enjoy!!!

Its one of the best alternatives to usual oats porridge. Adding dals to oats make the dish tasty. I bet who don't like the taste of oats will also like this dish. All you need is a Kuzhipaniyaram pan.

Ingredients:


Oats                                                - 2 cups
Toor Dal ( Thuvaram Parupu)       - 1/4 cup
Channa Dal (Kadalai Parupu)        - 1/4 cup
Red Chilli                                       - 1

For Seasoning:

Big onion                                        -1
Chopped Green Chillies                 - Few
Chopped Coriander                        - Few
Chopped Curry Leaves                  - Few
Chopped Ginger                             - Few

Procedure:

  1. Soak both dals at-least for three hours.
  2. Grind it along with red chilli, Once dals get broken add oats. (picture 1).
  3. Add everything under seasoning (picture 2).
  4. Heat the kuzhi paniyaram chatti. Add oil.. Pour batter.. Carefully turn the paniyaram once its done with one side.
  5. Serve it with any chutney or Ketchup..
