Kaara Chapathi (Spicy Chapathi)

This is the recipe for those who are looking for chapathi recipe with a difference. One of the best ways to make usual chapathi much more interesting. The recipe follows..

Yields : Around 5 Chapathi

Preparation Time : 15 minutes

Ingredients:

Whole Wheat Flour        - 1 cup
Corn Flour                      - 2 tbsp (Chola Maavu)
Salt                                  - As required
Water                               - As required
Oil                                    - Optional

To Coarsely Grind:

Chopped Ginger   - 2 tsp
Green Chili           - 1
Cumin Seeds         - 1/2 tsp
Coriander Leaves  - few

Procedure:


  • Coarsely grind everything under ' To Coarsely Grind'. Take a bowl. Add whole wheat flour, corn flour, salt and coarsely ground mix to it. Mix everything well. 
  • Add warm water to bowl in small instances and start kneading the dough.  The dough should be little sticky for making soft chapathi. So add water accordingly. 
  • Cover the dough with a wet cloth and set it aside for 30 minutes. This is also one of the tricks for preparing soft chapathi. 
  • After 30 minutes, take a lemon sized ball and roll it with the help of flour. Heat a pan. Place rolled chapathi on a hot pan. Cook it on both sides and serve with side dish of your choice. If you want spray some oil or ghee.

Preparation Time : 20 minutes


Ingredients:

Chapathi                    - 4
Big onion                  - 1
Green Peas                - a handful
Capsicum                  - 1 (small)
Ginger Garlic Paste   - 1 tsp
Green Chili               - 1
Red Chili Paste         - 1/2 tsp
Tomato Ketchup       - 1 tsp
Salt                            - As required
Oil                             - 1 tbsp
Coriander Leaves      - for garnishing

Procedure:

  • Chop finely Big Onion and Green chili. Boil Green peas. Chop Capsicum into little bigger pieces. Chop also chapathi into bigger pieces.
  • Heat oil in a pan. Add Chopped onions to it. When they turn translucent, add Ginger - Garlic paste.
  • Saute till raw flavor goes off and after that add Red chili paste.
  • Add also chopped capsicum and boiled peas after the raw flavor of Red chili  paste goes off.
  • Add in tomato ketch up and required salt. Adjust the spice according to your taste.
  • Mix everything well and add chopped Chapathi to the pan.. 
  • Mix everything and saute for five more minutes, so that masala coats well with chapathi.
  • Garnish with coriander leaves and serve it hot with Raita.

Chapathi is a healthy breakfast which is prepared with whole wheat flour. Its very easy to prepare. Here is that easy and healthy breakfast recipe

Ingredients: ( makes 3 rotis)

Whole wheat flour  - 1 cup 
Hot water                - As needed
Salt                          - As needed


Procedure: 

Add salt to flour and mix well.. Add hot water in small instances and knead it.. The dough should be sticky only..

Atleast once in two weeks he wants the noodles.. Thought to change this habit and found out this interesting recipe..

Its Chapathi Noodles!!!.. Noodles made from Chapathi. . Though the taste differs from that of instant one, its very tasty and healthy indeed!!! My Kid believed that its a type of noodles and named it Indian Noodles .. Here is that interesting recipe.. See, whether you can convince your child too!!!

Ingredients: (Recipe for One Person)

Chapathi                 -2
Big Onion               -1
Cabbage                  - 1/4 cup
Garlic Pods             - 2
Salt                          -As required
Turmeric powder     - 1/4 tsp
Chilli Powder          - 1/2 tsp
Tomato Ketchup      - 1tbsp
Coriander Leaves     - few

Procedure:

Chop both chapathis into lengthwise strips.. Finely chop Onions, Garlic and cabbage..
Heat oil in  a pan.. Add chopped Onions and Garlic.. After 2 minutes add chopped cabbage.
Add in salt, turmeric powder, chilli powder and tomato ketch up..mix it well.. 
Saute it well for 3-5 minutes..Garnish with coriander leaves and serve..

Quick tips:

You can add Carrots and Boiled peas too.. add an egg and turn it to  Egg noodles. .

Mini onion samosa ( along with video in Tamil)

Ingredients:


For Outer layer:


Maida flour                 - 1/2 cup
Whole wheat flour    - 1/2 cup
Salt                                - 3/4 tsp
Oil                                  - 1 tbsp
Water                            - as required


For stuffing:


Chopped Big onion        - 1/2 cup
Flattened rice                  - 1/4 cup ( aval)
Salt                                     - as needed
Turmeric powder           - 1/4 tsp
Chili powder                    - 1 tsp
Cumin powder                - 1/4 tsp
Coriander powder          - 1/4 tsp
Garam masala powder  - 1/4 tsp
Curry leaves                     - few
Oil                                       - for frying

Preparatory works:


Take Maida flour, wheat flour, salt and oil in a wide bowl. Add water in small instances and knead the dough tight. Cover the dough and let it sit for thirty minutes.

Powder flattened rice. Flattened rice is added to remove moistness from onion and hence samosa won't absorb much oil.

Take 2 tbsp of maida in a separate bowl. Add water in small instances and make a thick paste out of it. This paste will be useful for sealing samosa corners.

Mix together chopped onion, powdered flattened rice, Curry leaves, salt, chili powder, cumin powder, coriander powder and garam masala powder.  your stuffing for mini onion samosa is ready.

Make small balls out of the dough and roll it into thin sheets with the help of  flour.  (Roll it very thin). place it on a heated tawa and cook on both sides just for few seconds. No need to cook well , just a little colour change is enough

Now trim it into a  rectangle leaving out the edges. Since we are preparing mini samosas, cut  the rectangle into two.  we are ready with the outer layer for samosa . In this method you can prepare only one chapathi or two samosa sheets at a time.if you are preparing samosa in more quantities you can follow the below procedure.

First roll out each dough ball into a smaller    chapathi. Then we have to stack them upon one another. Take a chapathi. Apply very good amount of oil and dry flour to it. Spread it well, then keep another chapathi over it. Like this you can stack chapathis. Roll them thin together using dry maida flour. Similar to the first procedure, heat it in a tawa for a few seconds and take it out. You must be able to separate chapathis which we stacked earlier. Separate it out, trim the edges and cut it into rectangles.
Hence we are able to make many sheets at a single time . Make sure you apply enough oil while stacking or else chapathis will stick together and we will not be able to separate it.  You can stack upto three chapathis for even cooking.

We are ready with samosa sheets. Let's see how to stuff samosa sheets. You can check the video for packing samosas.

Take a sheet . Apply little maida paste in a corner. Fold it inwards so that it forms a triangle shape. Now fold that triangle in the other side so as to form a pocket in the middle. Stuff it with the stuffing and then roll the left out sheet and close it also by applying maida paste.

Let the paste dry for some time and then fry the samosas in medium flame till it is crisply done on both sides .your tasty mini onion samosas are piping hot ready!!



Notes:


You can also use readymade samosa sheets for the recipe

Before frying samosas in oil, make sure all the sides are sealed with maida paste.

You can also prepare spring rolls with the same samosa sheets we prepared

You can  also fry the corner pieces of chapathi which we cut out while preparing samosa sheets. Add little bit of salt and chili powder to it.  Yummy it will be.

Its nothing but Vegetable pattties stuffed inside Chapathi, topped with Onion,lettuce, tomato ketch up and curd. No fuss meal!!! No need to take many boxes. You can take all the rolls in a single box. Very interesting isn't it??

Preparation Time : 10 minutes


Ingredients:


Chapathi                                                                     - 1
Big Onion                                                                   - 1
Chopped Lettuce / Chopped Cabbage                      - a handful
Tomato                                                                       - 1/2
Tomato Ketch up                                                        - 1 tbsp
Curd                                                                            - 1 tbsp
Oil                                                                               - 1 tsp

Procedure: 

  • Chop Big onion  and Lettuce lengthwise. Cut tomatoes in round shape. You can use cabbage, if you couldn't find Lettuce. You  can skip adding any of these above vegetables too. 
  • Take Chapathi in a plate. Place the patties inside in a corner, Top it with onion, tomato and lettuce.  Add tomato ketch up and curd over the stuffing. You can also add Egg omelette to Baguette. I don't prefer adding Mayonnaise to any bread. So i used curd instead.
  • Roll the chapathi and enjoy it. If you are taking Kati roll to eat out or taking it in lunch box, you can lock the roll with a Tooth-pick.
  • Enjoy your roll!!

Pulkha roti is a type of chapthi which is cooked on stove top.. It stays soft for a long time and its cooked without oil..  Just you do simple alterations to chapathi dough.. That's enough!! Here is the recipe!!

Homemade instant wheat cerelac for babies



Yes!! you read it correct., Why to buy cerelac from outside when you can prepare hygienically at home. That too we are using whole wheat flour and palm sugar (panangarkandu). Hence its healthy too. .😇



All you need is

Whole wheat flour. - 1 cup
Butter.                        - 1/4 cup
Palm sugar.               - 1/2 cup
Water.                         - little less than 1/4 cup

Instructions:


  1.  Melt Butter .
  2. Dissolve palm sugar in water and boil till it dissolves. Once it has dissolved strain the palm sugar water. This is done to remove impurities from palm sugar. You can powder palm sugar before adding it to water if its big.
  3. Add both melted butter and palm sugar water  to whole wheat flour and start kneading it like chapathi dough. The dough will be sticky only ..
  4. Preheat the oven to 180 degree Celsius.
  5. Place the dough in between two greased plastic sheets and roll it out just like chapathi.
  6.  Cut the rolled out dough into smallspieces with a help of a knife.
  7. Now bake it at 180 degree Celsius for about 15 minutes . Let it cool for sometime.
  8. After it has cooled down completly, powder it in a mixier grinder. It will look like this after baking.




Your instant wheat cerelac is ready. Make sure you store it in a dry airtight container. I used to use this powder within two weeks.

 Take required amount of powder in a bowl. Mix water to it and you can feed it to baby..

Shortly we can call Radish, as Miracle Vegetable. Yes !! Its one of the very low calorie vegetables. It plays very important role in prevention of various cancers. It also helps to maintain good heart health. 

I have heard , many people saying that, they don't cook Radish because of its pungent odour. That pungent odour will be totally absent in this paratha..   Everyone will like this paratha for sure..This is the tastiest way to include healthy Radish in our diet..

  A must try recipe for sure..

Ingredients: (Makes 4 Parathas)

Wheat Flour        -  1 cup
Salt                      - As required
Hot Water           - As required
Oil                       - As required


For Stuffing:


Radish                              - 1 (medium size)
Salt                                   - As required
Turmeric Powder              - 1/4 tsp
Chilli Powder                     - 1/2 tsp
Coriander Powder             - 1/2 tsp
Cumin Powder                  - 1/4 tsp
Garam Masala Powder     - 1/2 tsp
Corinader Leaves              - few

Procedure:

  • Grate Radish. Heat oil in a pan.. When the oil is hot, add  grated radish.. Saute for 3-5 minutes and add in all the powders except garam masala powder.
  • Saute it for another 5 minutes.. Switch off the flame  after all the water has been evaporated and add garam masala powder.Now the stuffing is ready..



  • Add salt to wheat flour. Add hot water in small instances and knead well.. Make balls out of the dough.. Roll out chapathi dough for 2 inch diameter with the help of flour..  Place the stuffing inside and throw some flour over the stuffing.This is done to avoid the stuffing from coming out.



  • Close the stuffing and remove the excess dough

  • Shape the dough with hands so that dough completely covers the stuffing.Roll out the dough with the help of flour..


  • Heat Dosa pan.. Place rolled out chapathi on the pan.. When its cooked on one side, turn it to other side.. Add Ghee, Butter or oil.. 
  • These parathas stay fresh and soft for a long time...Enjoy with curd or pickle.. Adjust the spice according to your taste.

Kadappa

This is the recipe which i learnt from one of my dear friends. This is how she makes this awesome gravy which goes well with Dosai, Chapathi / Roti. One of the simplest and easiest side dish gravies that also stay light on stomach. The recipe follows..

Recipe For : 2

Preparation Time : 15 minutes

Ingredients:


Moong Dal                   - 1/2 cup (Pasi Parupu)
Big Onion                    - 1
Tomato                         - 1
Chopped Coconut        - 3 tbsp
Green Chili                   - 1
Chopped Ginger           - 1 tsp
Chopped Garlic            - 1 tsp
Whole Garam Masala  - Each 1
Salt                               - As required
Turmeric Powder          - 1/4 tsp
Curry Leaves                - few
Oil                                 - 2 tbsp

Procedure:


  • Chop finely Big onion, tomato. Slit Green Chili. Grind coconut to a fine paste adding little water.
  • Take a cooker. Add washed moong dal, slit green chili, chopped onion, tomato, ginger and garlic to it. Add enough water , turmeric powder and cook everything together. I used to cook in high flame for 5 continuous whistles. 
  • Heat oil in a pan. Add Whole Garam Masala such as Cinnamon stick, Cloves , Star Aniseeds and also Curry leaves.
  • Saute for a minute and then add cooked dal mixture. Add ground coconut paste and enough salt.
  • Mix everything well and switch it off when the gravy starts to boil. Your Kadappa is ready to enjoy with Idli , Dosai , Chapathi / Roti.

Chow Chow kootu ( chayote kootu)

More than chow chow kootu ,chow chow gravy  name suits this dish well.

This is the best way to make  kids eat chow chow. My kids don't like much the spiceless chow chow kootu which we prepare with Channa dal .😕. Instead they love this way of eating chow chow .

  Just have it with hot steaming rice and crispy pappad..  awesome it will be🙌.

You may also even try it with Idli, dosai or chapathi

Recipe for : 2

Preparation time : 10 minutes

Cooking time : 20 to 30 minutes


Ingredients:


 Chow Chow               - one big size ( yielded 1 cup when chopped)
Salt                               - as required
Turmeric powder     - 1/2 tsp
Oil                                - 1 TSP
Mustard Seeds.         - 1/2 TSP
Coriander leaves      - for garnishing


To saute and grind:

Big onion          - 1 (medium size)
Tomato.             - 1. ( Medium size)
Garlic pods       - 2
Dry red chili.    - 4
Coriander seeds- 1 TSP ( Malli or dhaniya)
Cumin seeds.      - 1/2 tsp ( seeragam)

Procedure:


1. Chop big onion , tomato and chow chow.
2  Take oil in a heavy bottomed pan. 
3  .Add dry red chili , coriander seeds, and cumin seeds to it.
4. When they starts spluttering, add chopped onion and garlic to it.
5. Add chopped tomatoes after onion starts changing its colour .
6. Switch off the flame after everything is cooked well.. let it cool down for a while and ground it to a smooth masala.
7. Add chopped chow chow, salt, turmeric powder and enough water( chow chow should be immersed in water) to the same pan.
8. Cook on medium heat till chow chow becomes soft. Add ground masala now and give it a good stir . Cook for five more minutes.
9. Tamper it with mustard seeds and garnish with coriander leaves.

Your dish is all ready..you can enjoy it with plain rice , idli, dosai or with chapathi.

Mustard Seeds     - 1/2 tsp
Curry Leaves       - few
Salt                       - As required
Oil                        - 1 tbsp

To Grind:


Chopped Coconut    - 2 tbsp
Dry red chili             - 2
Cumin Seeds            - 1/2 tsp

Procedure:


  • Chop capsicum into little bigger pieces. Grind everything under ' To Grind'.
  • Heat oil in a pan. Add mustard seeds to it. When they splutter add curry leaves.
  • After a second add chopped capsicum.
  • Cover with a lid and cook it. After the capsicum is half cooked, add ground masala and enough salt.
  • Add also needed water and cook the gravy for five more minutes in low flame. Your Capsicum masala is ready by now. Enjoy with Chapathi/Roti.

Preparation Time : 20 minutes


Ingredients:


Meal Maker              -  8 - 10 (Soya Chunks)
Small Onions            - 6 to 8
Salt                            - As required
Turmeric Powder      - 1/4 tsp
Oil                             - 1 tbsp

To Grind:

Coriander Seeds     - 1/2 tsp (Malli)
Dry Red Chili        - 1 (Milagai Vathal)
Cumin Seeds          - 1/2 tsp (Seeragam)
Pepper                    - 3 to 5
Chopped Coconut  - 2 tbsp

Procedure:

  • Soak Soya chunks, in hot water for 10 minutes. After that squeeze out excess water. This is done to soften the chunks. If the soya chunks are bigger chop into two. If its small, use as such.
  • Finely chop small onions. If you couldn't find small onions, can also use Big onion.
  • Dry roast Coriander seeds, dry red chili, cumin seeds, pepper and grind it to a smooth paste along with coconut.
  • Heat oil in a cooker. Add chopped onions to it. Saute it for some time. After they turn translucent add chopped meal maker.
  • Add also ground paste, salt, turmeric powder and enough water.
  • Mix everything well and cook for a whistle. If you think the gravy is very much watery, simmer the gravy for some time.
  • Enjoy your Meal Maker Kuzhambu!!!

Love potatoes?? But hesitating to eat because of its risk factors??.. Potato is one of the most comfortable vegetables.. It has more potassium than that of a banana..It helps with Digestion, Heart health, Blood Pressure and even cancer prevention.

But if you have it as French fries , Hash brown  or potato fry, you tend to loose the whole nutrients of potato.. So try to reduce potato intake in such form.. The best way to have potatoes is in their steamed form.. Even in  boiling, we are losing all nutrients in water.. So just place it on a steam pot or in a Idli pot and steam it..

Potato is  full of carbohydrates only.. carbohydrates will get digested soon and you will feel hungry soon.. So you will eat more food for the next meal. That is the reason, we are advised not to have much potato..   So even if you take potato for a meal, reduce other carbohydrates like rice..  Have some fresh vegetables and fruits along with it for a  Nutritionally balanced meal..

 The better way to include potato in healthy way is Aloo Paratha.. And you don't need any Side -dish for this.. Just have it with Curd or pickle.. An Easy Go recipe..

Ingredients: (Makes 4 Parathas)

Wheat Flour        -  1 cup
Salt                      - As required
Hot Water           - As required
Oil                       - As required

For Stuffing:

Potato                                - 1 (Big Size)
Big Onion                          - 1
Ginger                                - a small piece
Salt                                    - As required
Turmeric Powder              - 1/4 tsp
Chilli Powder                    - 1/2 tsp
Coriander Powder             - 1/2 tsp
Cumin Powder                  - 1/4 tsp
Garam Masala Powder     - 1/2 tsp
Corinader Leaves             - few


Procedure:

Finely chop Onion and Ginger.
Take a bowl.. Mix everything under 'For Stuffing' well Make balls out of it.
Add salt to wheat flour. Add hot water in small instances and knead well.. Make balls out of the dough.. 
Dough balls and stuffing balls should be of same size.

Roll out chapathi dough for 2 inch diameter with the help of flour..  Place the stuffing inside.

Preparation Time : 20 minutes

Ingredients:

Whole Garam Masala    - Each 2
Carrot                             - 1 (medium size)
Potato                             - 1 (medium size)
French Beans                 - 8 to 10
Peas                                - a handful
Big Onion                       - 1
Salt                                 - As required
Turmeric Powder           - 1/4 tsp
Chili Powder                  - 1/2 tsp
Garam Masala Powder   - 1/2 tsp
Oil                                   - 2 tbsp
Coriander Leaves            - for garnishing

To Grind:

Chopped Coconut      - 1/4 cup
Chopped Ginger        - 1 tsp
Chopped Garlic         - 1 tsp
Green Chili                - 2
Fennel Seeds             - 1/2 tsp
Poppy Seeds              - 1/4 tsp

Procedure:

  • Chop all the vegetables into little bigger pieces. Chop Big onion lengthwise.
  • Cook Fresh peas. Grind everything under 'To Grind'.
  • Heat oil in a cooker. Add whole Garam Masala.
  • After a second, add chopped onions.
  • After they are translucent, add chopped carrot, potato, french beans and Peas. You can add also Tomatoes and Soya chunks.
  • Saute them for a minute and then add masala, enough salt, turmeric powder and chili powder.
  • Add enough water and cook it for a whistle.
  • When the pressure subsides, open the cooker and add Garam Masala Powder. Garnish with coriander leaves.
  • Enjoy with Chapathi/ Roti of your choice.

Chicken Kolhapuri

Here is the recipe for super tempting, hot and spicy Kohlapuri Chicken gravy which tastes awesome with Rice or Chapathi or Roti. Here you go!!

Preparation Time : 40 minutes

Ingredients:


Chicken                        - 1/2 kg
Big Onion                     - 2
Ginger-Garlic paste      - 1 tbsp
Cumin Seeds                 - 1/2 tsp (Seeragam)
Salt                                - As required
Turmeric Powder          - 1/4 tsp
Coriander Leaves          - few
Curry Leaves                 - few
Oil                                  - 2 tbsp

Dry Roast And Powder:

Dry Red Chili          - 4
Fennel Seeds            - 1/2 tsp (Sombu/Perunjeeragam)
Whole Black Pepper - 8 to 10
Poppy Seeds              - 1/2 tsp (Khasa Khasa)
Sesame Seeds            - 1/2 tsp (Ellu)
Grated Coconut         - 1/4 cup
Cloves                        - 2
Nutmeg                      - 1
Mace                          - 1
Green Cardamom      - 2

Procedure:


  • Wash well chicken. Chop finely Big onion. Dry roast and powder everything under ' To Dry Roast And Powder'.
  • Heat oil in  a pan. Add cumin seeds to it. When they splutter add chopped onions to it. 
  • After they turn translucent, add Ginger- Garlic paste to it.
  • Saute till raw flavor goes off and after that add washed chicken pieces to the pan.
  • Add  enough salt and turmeric powder to the pan. Cover with a lid and cook it. 
  • You will see chicken slowly oozing out water. Now add 1 cup of water. When chicken is half cooked, add ground powder.
  • Cook in a medium flame, till chicken is cooked completely. Adjust the gravy consistency according to your requirement. Enjoy your chicken kolhapuri with Rice, Chapathi/Roti of your choice.

Here is an interesting recipe with Egg.. Mouth watering Egg Thokku.. It tastes so good with Hot rice, Chapathi or Bread.. If you are having with rice, prepare this thokku with full eggs. If you are preparing thokku for Chapathi or Bread, Chop the Boiled egg, add to the gravy and use..

Ingredients: (Recipe For 1)

Hard Boiled Egg        - 1
Big Onion                  - 1
Tomato                      - 1
Ginger-Garlic Paste   - 1 tsp
Turmeric Powder       - a pinch
Chilli Powder             - 1/4 tsp
Cumin Powder           - 1/4 tsp
Garam Masala            - 1/4 tsp
Salt                             - As required
Oil                              - As required
Coriander Leaves       - few

Procedure:

  • Hard boil the egg. Finely chop Big onion and tomato.
  • Heat oil in a pan. Add chopped onions to it.
  • Add Ginger-Garlic paste, after the onions are translucent.
  • After the raw flavor of Ginger-Garlic paste goes off, add chopped tomatoes.
  • Add all the powders, salt and little water.
  • Mix everything well. Close with a lid and cook well.
  • When everything is cooked well, switch off the flame and add Garam Masala powder.
  • Add also boiled egg and mix with the gravy.
  • Garnish with coriander leaves and serve it..
