Summer has started... Drinking koozh, really helps us to prevent from getting dehydrated. And adding all the nutrients, here is the healthy koozh recipe.. Prepare it before night. Mix it with Buttermilk in the morning and have it along with small onions, Green Chillis and  Brinjal Kuzhambu.. You will feel really fresh and cool all day long..

Here is the perfect summer breakfast recipe..

Ingredients:

Ragi Flour                  - 1 cup
Cooked Rice              - 1/2 cup
Salt                             - As required
ButterMilk                  - As required

Procedure:

  • Take a heavy bottomed vessel. I usually prefer my cooker. Add enough water and salt to the  Ragi flour. Enough water should be added to obtain dosai batter consistency. Mix well and keep it aside for 1 to 2 hrs. This is done for fermenting the flour.
  • After that, measure ragi flour mix. Now add same amount of water to the ragi  flour mix, add also cooked rice and start cooking the koozh. You can also skip adding cooked rice. It just gives additional taste.
  • Keep on stirring in between or else the koozh may get burnt in the bottom. Cook in medium flame untill its  cooked. Once koozh changes its color, i.e when it becomes dark brown color, it indicates that its cooked.
  • switch off the flame and  let the koozh ferment for the whole night. Fermenting enhances nutritional benefits. You can also prepare in the morning and drink immediately.
  • The next morning, take out  liitle koozh in a vessel. add enough buttermilk and dissolve it.  Enjoy it with small onions, Green chillies or Brinjal Kuzhambu For Koozh
  • You can also have koozh as such, without dissolving in buttermilk, along with  Brinjal Kuzhambu.
  • Enjoy your healthy breakfast..

I am not a fan of  regular Sweet French Toast. Used to prepare sweet French Toast  often since my kid and Husband loves it. Tried  this Masala French Toast recipe once. From then on wards, this has become my favorite recipe. This toast recipe really melts you down..

Recipe For : 4 Breads 

Preparation Time : 10 minutes

Ingredients:

Bread Slices             - 4
Egg                           - 1
Boiled Milk              - 1/4 cup
Ginger- Garlic Paste - 1 tsp
Big Onion                 - 1 (small)
Chopped Capsicum  - a handful
Green Chili               - 1
Salt                           - As required
Turmeric Powder     - a pinch
Pepper Powder         - 1/4 tsp
Coriander Leaves     - few
Oil                             - for bread.

Procedure:

  • Chop finely Big Onion, Capsicum,Green chili and coriander leaves.
  • Take a bowl. Add egg to it. Beat it well till its fluffy. 
  • Add Boiled milk and Beat it together. Adding milk gives softness to the toast.
  • Add  Ginger garlic paste, salt, turmeric powder, pepper powder and chopped vegetables to the bowl and mix everything well.
  • Take a Bread slice, Dip in the bowl. Take out immediately and cook it in a Dosai pan. 
  • Add oil to the bread. When Bread is cooked on both sides take it out from pan and Enjoy it hot.

Whole Wheat Naan

Whole Wheat Naan How many Naan lovers there??? Here is the recipe for easy Homemade Butter Naan. . I usually prepare Naan with whole wheat flour. I don't prefer Maida flour, since many chemicals are used to refine it..  Try to replace Maida with Whole Wheat flour for preparing Poori, Parotta or Naan for a healthy life style.. You will surely love the taste too!!!

Now coming is the recipe for Whole Wheat Naan..

Recipe For : 8 Naan


Preparation Time : 2 hours


Ingredients:

Whole Wheat Flour               - 3 cups
Sugar                                      - 1 tbsp
Instant Yeast                          - 1/2 tsp
Yogurt                                    - 4 tbsp
Butter                                     - 2 tbsp
Water                                     - 1.5 cups
Kalonji Seeds                        - few (Karunjeeragam)
Salt                                        - As required


Procedure:

  • Take instant yeast, sugar in a bowl. Add 1.5 cups of water to it and mix well. Let the mixture sit idle for 10 minutes.
  • After 10 minutes, you can see the mixture has frothed. Now add 1 cup of wheat flour and whisk it. Keep it aside for 45 minutes. Now the mixture would look like in the below picture.
  • After 45 minutes, add remaining flour, salt,yogurt and butter to the bowl and start kneading well. Cover and keep the dough for 30 minutes.
  • After 30 minutes, divide the dough into big size balls. Cover it again and keep it aside for 20 minutes.
  • After 20 minutes, start rolling the dough with the help of flour. Sprinkle some Kalonji seeds in between and start rolling the dough.
  • Heat a dosai pan. When its hot place rolled out dough on it and cook on both sides. When its done on both sides, add some butter over the cooked Naan and serve it hot...

We can't list out the benefits of murungai Keerai as it has innumerable benefits.. It increases appetite, helps to reduce diarrhea, and it also reduces blood sugar level..

It was a very difficult task for me to make my husband eat  Murungai keerai.. Tried this adai for the first time.. He din't even know that i have added  murungai keerai.. He has thought that it was just curry leaves... yeah!! Mission accomplished!! .. From then ,started packing a big bunch of keerai when ever we visit our native... Here is that amazing recipe.. And one more advantage.. You needn't ferment the batter.. You can start cooking adai as soon as you grind the batter..

Ingredients:  ( Makes around 18 Adais)

To Soak:


Paccharisi                 -  2 cups    ( Raw rice)
Pulungal Arisi          -  2 cups    (Boiled Rice)
Kadalai  Parupu        -  3/4 cup  (Channa Dal)
Thuvaram Parupu     - 1/2 cup   ( Toor Dal)
Pasi Parupu               - a handful(Moong Dal)
Javvarisi                    - a handful(Sago Seeds)


Things to be grinded with:

Red Chillies             - 2
Kothamalli Seeds     - 2 tsp   (Malli)
Seeragam                 - 1 tsp    (Cumin Seeds)
Sombu                      - 1 tsp    (Fennel Seeds)
Milagu                      - 1 tsp    (Pepper)
Garlic Pods               - 2

For Seasoning:

   Oil                        - As required
Mustard Seeds        - 1 tsp
Urad Dal                 - 1 tsp
Channa Dal            - 1 tsp
Big Onion              -1
Drum Stick Leaves - 2 handful
Coriander Leaves   - few
Curry Leaves          - few
Salt                          - As required


Procedure:

  • Soak everything under the title 'to soak' for atleast 2 - 3 hrs.
  • Then grind it along with the things under the title 'Things to be grinded with'.
  • Heat oil in  a pan.  Add everything under ' for sesoning'.. Its enough to saute murungai keerai just for 2-3 minutes. After that pour the sesoning in the batter.. No need to ferment the batter.. you can start preparing adai immediately.
  • Heat a dosai pan.. Grease it with oil.. add the batter to the pan and expand it like adai.. Apply oil to it.. Once both sides are done, remove from the flame and serve it!!!
  • I am serving adai with Coconut Chutney

Besan Bread Toast (No Egg Bread Toast) Today's recipe is No Egg Bread Toast.. Bread dipped in Besan flour batter and its toasted. I have added onion and tomato to the Besan flour batter. You can also add Capsicum if you wish. The recipe follows..

Ingredients:


Bread Slices                     - 2
Besan Flour                     - a handful (Kadalai Maavu)
Chopped Big Onion         - 2 tbsp
Chopped Tomato             - 2 tbsp
Salt                                   - As required
Turmeric Powder             - a pinch
Chili Powder                    - 1/4 tsp
Corinader Leaves             - few
Curry Leaves                    - few
Oil                                     - 1 tbsp

Procedure:

  • Make sure Big onion, Tomato, coriander leaves and Curry leaves are finely chopped. You can use also capsicum if you wish.
  • I have used Whole wheat bread for the recipe. You can use any type of bread.
  • Take a bowl. Add Besan flour, salt, Turmeric powder and chili powder to it. Whisk it well so that no lumps are formed. Add also chopped vegetables to the bowl. Mix everything well.
  • Take a Bread slice, Dip in the bowl. Take out immediately and cook it in a Dosai pan. 
  • Add oil to the bread. When Bread is cooked on both sides take it out from pan and Enjoy it hot.

As i always mention, tastiest and easiest way of including millets in our diet is in the form of Idli or Dosai. Today's recipe is an interesting recipe with Kuthiravali Arisi (Barnyard Millet) ,which has low glycemic index and hence its too good for controlling Diabetes. The recipe for super soft and fluffy Kuthiraivali Arisi Idli follows..

Yields       : 25 idlis


Preparation Time : 15 minutes + time for Grinding & Fermentation


Ingredients:


Kuthiraivali Arisi    - 3 cups (Barnyard Millet)
Urad Dal                  - 3/4 cup 
Fenugreek Seeds  - 2 tsp (Vendhayam)
salt                            - As required

Procedure:


  1. Soak Kuthiraivali Arisi (Barnyard Millet) and Fenugreek seeds for at-least 3 hours. Soak Urad Dal separately for an hour.
  2. Grind  Kuthiraivali arisi (Barnyard Millet)  and vendhayam (Fenugreek Seeds) to a smooth batter. Grind Urad Dal separately.
  3. Mix both well and add also enough salt.
  4. Let it ferment for 1 whole night.
  5. The next morning, Grease the idli plates.. Pour in batter and steam idlis.
  6. Enjoy your hot steaming Idlis with Sambar Chutney Of Your Choice.

Malai Roti (Roti Canai)

Today's recipe is Malai Roti, which is prepared with Maida, egg and milk. One of the best alternatives for Parotta. This dish tastes good only when prepared with Maida. So you can try this dish, on special occasions and on parties. The recipe follows..

Yields : Around 6 Roti
Ingredients:


Maida                - 2 cups (All Purpose Flour)
Milk                   - 1/2 cup (Boiled and cooled down milk)
Egg                    - 1
Butter                 - 1 tsp 
Baking Soda       - 1/4 tsp (You can also use Cooking Soda)
Sugar                  - a pinch
Salt                     - As required
Oil                      - 1/4 cup

Procedure:

  • Take a bowl. Add Maida, salt, sugar and Baking soda to it. Mix everything well. Break an egg and add it to the bowl. Add also butter to it. Add milk in small instances and start kneading the dough. The dough should be of very soft consistency so add little water if needed and knead accordingly. If the dough is of soft consistency only, you can expand it easily.
  • Apply some oil on the top of dough so that dough don't get dry. Cover it with a cling wrap and rest the dough for an hour. If you don't have cling wrap just cover the bowl tightly with a plate.
  • After an hour, take big lemon size balls from the dough. Expand it with your palm using oil. Fold in the shape you wish. I have folded it in rectangular shape.
  • Heat a dosai pan. When its hot, place shaped out roti to it. Add also oil to it. When roti is cooked on one side, flip it to other side. Remove from heat after its done on both the sides. Enjoy your Roti with either Veg Side dish Gravies or Non-Veg Side dish gravies of your choice.

Aappam


Appam is the dish which few people think that its hard to prepare. But its quite easy. Just like Dosai one can do. You have to prepare the batter. Soak the ingredients for batter on the previous day itself.

Soak it for atleast 5 hours. Then grind it. Let it ferment for the whole night. In the morning , can prepare appam with the batter. you don't even need a typical appam pan. If your stove is a electirc one, you can't use appam pan. In that case you can use a small non-stick pan. The corners won't be very crispy.. But something is better than nothing. So give it a try.


 Ingredients: 


Idli rice                                        - 1 cup
Paccharisi ( Raw rice)                 - 1 cup
Urad dhal                                     - 1/4 cup
Javvarisi ( Sago)                          - 1/4 cup
vendhayam ( fenugreek seeds)    - 2 tsp
Salt                                               - as required
Gingelly Oil                                 - for appam
Grated Coconut                            - a handful


Procedure:

  1. Add grated coconut to the fermented batter. The batter should be in free flowing consistency
  2. Heat the pan. 
  3. Add oil to grease the pan. 
  4. Pour batter with a ladle in the centre .(picture 1)
  5. Then rotate the pan so that batter reaches all the parts of the pan. Apply some oil. Close it with a lid. (picture 2 & 3)
  6. Once its done remove from the flame and serve with coconut milk.


Quick Tips:

 Though many procedures are followed for preparing appam, this is the one which i learnt from my MIL. I don't prefer adding appam soda since its unhealthy. If you want you can add a pinch.

This is the recipe which  i learnt from one of my dear friends. When ever i visit her place, she will make this Potato gothsu and hot steaming dosais especially for me. Right from day one, i liked this gothsu a lot. That tempting recipe is for you..

Recipe For : 2

Preparation Time : 30 minutes

Ingredients:

Potato                     - 1 (medium size)
Big Onion               - 1 (small size)
Tomato                    - 1 (small size)
Salt                          - As required
Turmeric powder     - 1/4 tsp
Mustard Seeds         - 1/4 tsp
Urad Dal                  - 1/4 tsp
Curry Leaves           - few
Oil                            - 2 tbsp

To Grind:

Chopped Coconut    - 3 tbsp
Dry Red Chili          - 2
Cumin Seeds            - 1/4 tsp (Seeragam)
Fennel Seeds            - 1/4 tsp (Perunjeeragam / Sombu)

Procedure:

  •  Chop finely Big onion, Potato and Tomato. Grind everything under ' To Grind' adding little water.
  • Heat oil in a pan. When its hot, add Mustard seeds and Urad dal to it.
  • When they splutter add chopped onions and curry leaves to it.
  • After they turn translucent, add chopped potato to it.
  • Saute till potato is half cooked and then add chopped tomatoes.
  • Add  Salt, Turmeric powder and ground masala after tomato has been cooked.
  • Add also enough water and cook the gravy in medium flame, till everything is cooked completely and the gravy reaches needed consistency. 
  • Adjust the spice according to your taste.It tastes so good with Dosai and Idly.

Mushroom And Vegetable Baguette roll Baguette is a type of French Bread. I have made a Indian type of filling for it. Just toast the Baguette. Fill in with stuffing. Add fresh onion, tomato and lettuce. Top it with Tomato ketchup and curd. There you go!!

Recipe For : 1 Baguette roll

Preparation Time : 10 minutes

Ingredients:

Baguette                                                                     - 1
Big Onion                                                                   - 1
Chopped Lettuce / Chopped Cabbage                        - a handful
Tomato                                                                       - 1/2
Tomato Ketch up                                                        - 1 tbsp
Curd                                                                            - 1 tbsp
Oil                                                                               - 1 tsp

Procedure: 

  • Chop Big onion  and Lettuce lengthwise. Cut tomatoes in round shape. You can use cabbage, if you couldn't find Lettuce. You  can skip adding any of these above vegetables too. 
  • Take Baguette. Slit them into two without completely diving it. Toast them with little oil in a dosai pan.
  • Then open it, Place the patties inside, Top it with onion, tomato and lettuce.  Add tomato ketch up and curd over the stuffing. You can also add Egg omelette to Baguette. I don't prefer adding Mayonnaise to any bread. So i used curd instead.
  • Close the Baguette and enjoy it.

Karuppatti is nothing but Palm Jaggery which is extracted from Palm trees. Unlike White sugar, which has only empty calories, karuppatti is rich in Iron, Calcium, Minerals and  Nutrients.

And one more good news!! Karuppatti can be consumed in little amount by people who suffer from Diabetes. Here is that recipe..

Ingredients:  (Makes 12 or 13 aapams)


For Batter:

Idli rice                                        - 1 cup
Paccharisi ( Raw rice)                - 1 cup
Urad dhal                                    - 1/4 cup
Javvarisi ( Sago)                         - 1/4 cup
vendhayam ( fenugreek seeds)  - 2 tsp

For Sweet Aapam: (Makes 5 aapams)


Aapam Batter                             - 1 cup
Karuppatti                                   - 1/2 cup (Palm Jaggery)
Grated Coconut                           - 1/4 cup
Oil                                              - As required

Procedure:

  • Soak everything under 'for batter' for at-least 3 hrs. Then grind everything together into a smooth batter.let the batter ferment for 8 hrs.
  • Grate karuppatti. Add very little water, just to immerse karuppati and boil it. Boil it till the karuppatti has dissolved. Take 1 cup of aapam batter. Filter karuppati syrup and add it to the aapam batter. Add grated coconuts to it.
  • Be careful when adding water to karuppati. The batter should only be little thinner than dosai batter. It should be in free flowing consistency.
  •  Take aapam pan and add oil to grease the pan. 
  • Pour batter with a ladle in the centre .
  • Then rotate the pan so that batter reaches all the parts of the pan.. Add oil and close it with a lid. 
  • When the aapam is done, serve it immediately.

Pancake

Kids these days  get to know  various varieties of foods easily.  Today's recipe is  one such globally popular breakfast dish .

Come let's see how to make kids favourite pan cakes easily at home.



Ingredients:

Maida                   - 1 cup 
Milk                      - 1 cup
Egg                        - 1
Sugar                    - 2 tbsp
Butter                   - 3 tbsp
Salt                        - a pinch
Baking powder   - 2 TSP

Procedure:

Take Egg and sugar in a deep pan and beat them together using a blender till it both gets mixed well.

Now add boiled and cooled milk to the pan. Blend it together.

Then add butter which is in room temperature and mix it well .

The pan in small instances and mix it well without any lumps. Your pan cake batter is all ready .

Heat a dosai pan .Add a laddle of batter to the pan and cook on both sides .No need to spread the batter.

You can serve  pancake in many ways..you can serve it with maple syrup, honey or chocolate syrup with added Nuts and fruits.

Serve in the way your kid loves and surprise them..😍

Making kids eating vegetables is a very tough job for mothers in most of the houses. Kids will eat vegetables if you give them in the form of cutlet. I have added Channa for additional protein. 

If you are concerned more about health , you can shallow fry them on a dosai pan or you can even grill  it. We used to do shallow fry only ,at home.

Ingredients:


Mashed Boiled Potato                              - 2 cups
Boiled Channa                                          - 1 cup
Boiled Peas                                               - 1/2 cup 
Finely Chopped Carrot                             -1
Finely  Chopped Big Onion                      - 1
Bread crumbs                                            - 2 tbsp
Salt                                                            - As required
Chilli Power                                              - 3 tsp
Cumin powder                                           - 1 tsp
Coriander Powder                                     - 2 tsp
Garam Masala Powder                              - 1 tsp
Finely Chopped Ginger                             - 1 tsp
Finely Chopped Coriander                        - Few

For Outer layer:

Maida                                                        - 2 tbsp
Salt                                                            - As required
Chilli Powder                                            - 1/2 tsp
Turmeric Powder                                      - pinch
Bread Crumbs                                           - 4-5 cups

Procedure:


  1. In a bowl add all the ingredients and mix it well. ( pictures 1, 2)
  2. Take  a small bowl. Add everything under ' for outer layer' except Bread crumbs. Add water in small quantities. The maida batter should be thick only. ( picture 3)
  3. Take a ball out of the channa n vegetable mix and mould it into the desired shape.
  4. Dip that into maida batter and take out instantly. Place it in the bread crumbs plate. Roll the vegetable mix in the bread crumbs so that bread crumbs sticks to all parts of it. ( picture 4)
  5. Fry in oil and serve it with ketchup.


Quick Tips


  1. Increase the amount of bread crumbs, if your vegetable , channa mix is moist in step1.  Cutlet will absorb more oil, if the mix is moist.

Kebab refers to any meat or vegetable cooked over or near the flame.. Its generally grilled or roasted in a skewer. Prepared this kebab for ' Girls Only Party' in our apartment.. Everyone brought a food from their home to the party hall..It was a total fun.. There was full of music, joy, and dance.. and of course food.. Enjoyed well!! It took me back to my college days!!! Prepared this oven grilled kebab for the party.. .  Can you guess how many vegetables this kebab has?? It has a total of 6 vegetables..
  • Mushroom
  • Potato
  • Plantain
  • French Beans
  • Peas
  • Carrot
And thus its a very healthy kebab.. Here is that interesting recipe..

Ingredients: (Recipe for around 70 kebabs)

Mushroom             - 250gm
Potato                    - 3 (medium size)
Plantain                 - 2 (medium size)
French Beans        - 8-10
Peas                      - 100 gm
Carrot                   -2
Big Onion            - 2
Ginger                  -  2 inch size
Green Chillies      - 2
Cashew Nuts        - 6-10
Lemon                  - Half
Bread Crumbs      - 1 cup

Powders:

Salt                                    - As required
Turmeric Powder              - 1/2 tsp
Chilli Powder                    - 2 tsp
Cumin Powder                  - 2 tsp
Garam Masala Powder     - 1 tsp
Chat Masala Powder         - 1 tsp

Procedure:

  • Place Skewers in water for at-least 1 hour. This is done to prevent the skewers from catching and  fire.
  • Boil or steam potatoes, plantain and peas.
  • Chop finely all the vegetables. Powder the cashew nuts.
  • Add oil in a pan. Add chopped ginger and green chillies. Add carrots, french beans, peas and mushroom  after a minute.
  • Saute it till the vegetables lose all the water. It took me about ten minutes.
  • Grate boiled potatoes and plantain.. Add saute vegetables to it.
  • Add enough bread crumbs so that there is no moisture in the vegetables mix.

  • Take skewers.. Take a big ball of vegetable mix.. Gently wrap it around the skewers.
  • Pre heat  the oven to 220 degree celsius.

  • Grill it for 25 -30 minutes. Keep on turning the skewers in between for even grilling.
  • Even if you don't have oven, you can place it on a dosai pan and grill it
  • Sprinkle some chat masala and serve it hot!!!

Ingredients:

All Purpose Flour       - 1 cup (Maida)
Rava                           - 1 tsp (Sooji)
Rice Flour                   - 1 tsp 
Salt                             - a pinch
Channa Dal                - 1/4 cup (Kadalai Parupu)
Jaggery                       - 1/4 cup
Cardamom Powder     - a pinch
Ghee                            - 2 tbsp
Gingely Oil                   - 4 tbsp


Procedure:


  • Boil Channa Dal for 5 whistles. Add jaggery and cardamom powder to boiled channa dal and cook in low flame so that jaggery melts. Switch off the flame after the stuffing reaches thick consistency. Let the stuffing cool. After it cools down completely, stuffing will get more thick.
  • Take a bowl. Add All purpose flour, rava , rice flour and salt to it. Add water in small instances and start kneading the dough. The dough should be little sticky only so that we can expand it easily. Add 2 tbsp of gingely oil to the dough.. Make sure dough is covered fully with oil. Close the bowl with a cling wrap and let it sit for 1 to 2 hours.

  • Take a small lemon sized ball. Place it on a greased plastic sheet. Expand it with your palm.



  • After stuffing  cools down, make small balls out of it.
  • Place the stuffing on expanded dough.

  • Close the dough and expand it again with your palms.  Always use oil for expanding poli.
  • Heat a dosai pan. When its hot, place poli on it. Add Ghee+Gingely oil to it. When its cooked on one side, slightly turn it to other side. Serve the poli after it is cooked on both the sides.
  • You can prepare the poli with Ghee alone. You can also prepare poli with Gingely oil alone.
  • Enjoy delicious poli!!!

This is my kid's favourite aapam.. He used to eat this aapam without any side-dish. Its one of the best ways to include egg in kids diet.. In this recipe, Egg is only half-boiled.. Hence all Half-boil lovers will love this aapam.. 

No problem if you don't have a typical  Aapam pan. Just use a small Non-Stick pan..  Here is that tasty recipe.

Ingredients:  (Makes 12 or 13 aapams)


For Batter:

Idli rice                                        - 1 cup
Paccharisi ( Raw rice)                - 1 cup
Urad dhal                                    - 1/4 cup
Javvarisi ( Sago)                         - 1/4 cup
vendhayam ( fenugreek seeds)  - 2 tsp

For Egg Aapam:

Egg                                             -  1 (For 1 aapam)
Salt                                              - as required
Pepper                                         - as required
 Oil                                               - for appam

Procedure:

  • Soak everything under 'For Batter' for 3-4 hrs. Grind everything together to a smooth batter.Let the batter ferment for at-least 8 hrs.
  • After the batter has fermented, take aapam pan and add oil to grease the pan. 
  • The batter should be in free flowing consistency. It should be only little thinner than Dosai batter. Pour batter with a ladle in the centre .
  • Then rotate the pan so that batter reaches all the parts of the pan.. Break an egg and pour it directly in the center of aapam. Throw in some salt and pepper. Add oil and close it with a lid. 
  • When the aapam is done on one side, carefully take and transfer it to the serving plate.
  •  Enjoy your Egg appam.. No side-dish required for this aapam. ;

Kambu Adai (Bajra Adai / Pearl Millet Adai)

This Adai needs no fermentation also. Try this awesome Adai recipe to lead a healthy lifestyle!!

Makes : Around 25 Adai


Preparation Time : 10 minutes+ Soaking time & Grinding time.


Ingredients:


Kambu                      - 1 cup (Bajra / Pearl Millet)
Raw Rice                  - 1/2 cup (Pacharisi)
Toor Dal                   - 1/4 cup (Thuvaram Parupu)
Channa Dal               - 1/4 cup (Kadalai Parupu)
Urad Dal                    - 1/4 cup (Uluntham Parupu)
Red Chili                   - 2
Coriander Seeds        - 1/4 tsp (Malli)
Cumin Seeds             - 1/4 tsp (Seeragam)
Black Pepper             - 6 to 8 (Milagu)
Big Onion                  -1
Curry Leaves             - few
Salt                            - As required
Gingely Oil               - For making Adai

Procedure:



  • Soak Kambu, Raw rice, Toor dal, Channa Dal and urad dal together for 2 hours. Chop Big onion and curry leaves finely.
  • After 2 hours, take a mixer- grinder. Grind Red chili, Coriander seeds, Black pepper and cumin seeds for a while and after that add everything which we have soaked before.
  • Grind everything together along with little salt. Add also chopped onions and curry leaves to the batter.
  • Heat a dosai pan. Spray little oil to it. Add batter to the pan and expand it. Apply oil to it. Once your adai is done on both sides remove from the pan and serve it hot.
  • Enjoy it with sambar and Chutney Of Your Choice.

This easy bread toast comes handy in busy mornings. Its  my family's  one of the favorite breakfasts. If its french toast, I can get up a bit late. It can be prepared in 10 minutes.

Ingredients:


Bread Slices                       -  8
Boiled Milk                        - 1.5 cups
Egg                                     - 1
Sugar                                  - 1 tbsp

Procedure:


  1. Beat egg in a bowl.
  2. Add milk and sugar.
  3. Dip bread slices in the bowl and take out immediately
  4. Toast it in a dosai pan.
  5. French toast is ready.

Quick Tip:


  1. Can use any type of bread ( sandwich,whole wheat or multigrain).

Ingredients:

To Marinate:

Chicken (With Bones)    - 1/2 kg
Ginger-Garlic Paste        - 2 tbsp
Red Chilli Paste              - 1 tbsp
Salt                                  - As required
Turmeric Powder            - 1/2 tsp
Cumin Powder                - 1 tbsp


Others:

Big onions                      - 4 or 5
Tomato                           - 1
Ginger-Garlic Paste       - 1 tbsp
Garlic Pods                    - 3
Oil                                   - As required
Coriander Leaves            - few

Powders:

Salt                                  - As required
Turmeric Powder            - 1/2 tsp
Cumin Powder                - 1 tbsp
Coriander Powder           - 1 tbsp
Chilli Powder                  - 1 tsp
Red Chilli Paste              - 1 tbsp
Garam Masala Powder   - 1 tbsp
Whole Garam Masala     - Everything 2
Sugar                               - a pinch


Procedure:

  • Marinate everything under 'To Marinate' for at-least 2 hours. Chop finely onions and garlic. Grind tomato.
  • Heat oil in a cooker.. Add whole garam masala.. After a second add onions and garlic.. When the onions become translucent add tomato paste.
  • Add in everything under 'powders' .. saute it till the raw smell goes off..
  • Add the marinated chicken and enough water..Mix the gravy well.. Close the lid and keep the cooker for 1 whistle. Reduce the flame and switch it off in another 10 minutes.
  • Garnish with coriander leaves and serve!!!
